What Is AFURI-Style Yuzu Shio Ramen?

To understand AFURI’s yuzu shio, it helps to understand the two poles of ramen broth texture: chintan (清湯, “clear soup”) and paitan (白湯, “white soup”). Paitan broths — tonkotsu, chicken paitan — are made by boiling bones vigorously until the fat and collagen emulsify, creating an opaque, creamy liquid. Chintan broths are the opposite: bones or carcasses are simmered gently, without allowing turbulence to cloud the liquid, producing a translucent broth that is delicate in body but concentrated in clean, savory flavor.

AFURI’s chicken chintan is the vessel. It is not thin or watery — a properly made chintan has genuine body from dissolved gelatin — but it is quiet in flavor, designed not to compete with the yuzu. The shio tare (salt seasoning sauce) is where the yuzu enters: yuzu juice and zest are steeped into the seasoning base, releasing aromatic oils alongside the acid of the juice.   • Water — 2.5 liters / 10.5 cups
  • Kombu (dried kelp) — 10 g / ⅓ oz (approx. 10 cm piece)
  • Ginger — 2 slices
  • Leek (green part only) — 1 piece, roughly chopped

Yuzu Salt Tare (makes approx. 150 ml / ½ cup+)

  • Yuzu juice — 3 tbsp (sub: 2 tbsp lime + 1 tbsp lemon, or bottled yuzu juice)
  • Yuzu zest — from 1 whole yuzu or 1 tbsp bottled yuzu peel
  • Salt (fine sea salt) — 2½ tsp
  • Light soy sauce (usukuchi shoyu) — 2 tbsp (sub: regular soy sauce, 1.5 tbsp)

Chicken Chintan Broth

Step 1 — Blanch the Chicken

Place chicken carcasses and wings in a pot and cover with cold water. Bring to a boil and cook for 3 minutes. Drain and rinse each piece under cold running water, removing any grey residue. This step, as with tonkotsu, is about removing blood and surface impurities that would cloud the finished broth.

💡 Carcass quality matters here: For chintan, the quality of the chicken is more visible in the final bowl than for tonkotsu, which can mask lower-quality ingredients behind its bold flavor. Use free-range or organic chicken carcasses if available — the resulting broth will have a noticeably cleaner, more complex flavor.

Step 2 — Low-Temperature Simmer (the Critical Step)

Return cleaned chicken to a fresh pot. Add 2.5 liters of cold water, kombu, ginger, and leek green. Bring the pot to just below a simmer over medium heat — watch for the first wisps of steam rising from the surface, then immediately reduce to the lowest heat setting. The target temperature is 80–90°C / 175–195°F: hot enough to extract gelatin and flavor, but not so vigorous that the broth clouds.

Maintain this low temperature for 2.5–3 hours. Skim any foam or fat that rises in the first 30 minutes. After that, the broth should become increasingly still and golden, with the bones gradually softening. Do not stir — agitation encourages cloudiness.

⚠️ Temperature discipline is the key to chintan clarity: A single brief boil can turn a clear chintan permanently cloudy. If your burner runs hot, use a diffuser or place the pot half off the burner to maintain the low temperature. A cooking thermometer is useful here. If cloudiness occurs, the broth is still delicious but is now closer to a paitan — reduce and use for a richer bowl.

Step 3 — Strain and Clarify

Remove the kombu at the 30-minute mark (it becomes slimy if cooked longer). After 2.5–3 hours, remove the pot from heat. Strain through a fine-mesh strainer lined with a single layer of muslin or cheesecloth. Do not press the solids — let the broth drain by gravity. Pressing extracts cloudiness. You should have approximately 1.5–1.8 liters of golden, largely clear broth.
