Ready in 10 minutes just by stir-frying! This budget-friendly Chanpuru uses bean sprouts, thinly sliced pork, tofu, and eggs, which are stable in price year-round. The crisp bean sprouts and savory tofu create an irresistible texture that will make you want more rice and drinks.

Ingredients

Main Ingredients (2 servings)

  • 1 Egg
  • 1 bag Bean Sprouts
  • 1/2 block Firm Tofu (approx. 150g)
  • 100g Thinly Sliced Pork

Seasonings

  • 1 tsp Dashi Powder
  • 1 tsp Soy Sauce
  • 1 tsp Sesame Oil

Steps

  1. Crack 1 egg into a bowl and beat it.
  2. Trim the root ends of 1 bag of bean sprouts.
  3. Cut the bean sprouts in half.
  4. Heat oil in a frying pan over medium heat.
  5. Tear 1/2 block of firm tofu (approx. 150g) into bite-sized pieces and place them in the frying pan.
  6. Flip the tofu occasionally and cook until golden brown on both sides.
  7. Push the tofu to the side of the frying pan.
  8. Tear 100g of thinly sliced pork into bite-sized pieces and spread it in the empty space.
  9. Stir-fry until the pork is cooked through.
  10. Add the cut bean sprouts and 1 tsp of dashi powder, and quickly stir-fry. [This is the secret!] Stir-fry briefly for about 30 seconds to maintain their crispness.
  11. Add 1 tsp of soy sauce and 1 tsp of sesame oil, and mix everything quickly.
  12. Drizzle the beaten egg over the entire dish.
  13. Stir-fry everything together, breaking up the egg as it cooks. Turn off the heat once the egg is cooked.
  14. Plate and serve.
