A super easy recipe: just mix and grill! Tamachī-yaki features the perfect balance of crispy onion and rich cheese. It's a filling and satisfying dish made with budget-friendly ingredients. It's perfect as a side dish for rice or as a snack to go with drinks.

Ingredients

Main Ingredients (2 servings)

  • Onion 1 pc (200g)
  • Cake Flour 2 tbsp
  • Eggs 2
  • Mixed Cheese 60g

Seasonings

  • Salt and Pepper 1/4 tsp
  • Vegetable Oil 1 tbsp
  • Scallions (for garnish) a little

Steps

  1. Peel the onion.
  2. Thinly slice 1 onion into approximately 3mm thick pieces.
  3. Place the thinly sliced onion into a bowl, separating the pieces.
  4. Add 2 tbsp of cake flour to the bowl. Gently shake the bowl to evenly coat the onion slices with flour.
  5. Once the flour is evenly distributed, add 1/4 tsp salt and pepper and 2 eggs.
  6. Whisk the eggs and mix everything together. The key here is to mix thoroughly so the egg coats everything; otherwise, the batter won't come together.
  7. Add 60g of mixed cheese to the batter and mix until evenly distributed.
  8. Heat 1 tbsp of vegetable oil in a frying pan.
  9. Pour the mixed ingredients into the heated frying pan.
  10. Gently press down the mixture to flatten it and form a round shape, ensuring it doesn't fall apart.
  11. Grill for 2 to 3 minutes until the bottom is golden brown and the pancake can slide easily. Use a plate as a lid to carefully flip the pancake out of the pan.
  12. If there is any remaining oil in the pan, pour it over the flipped pancake.
  13. Cover the pan with the pancake and flip it back into the pan.
  14. If the shape has become distorted, use a spatula to gently reshape it into a circle.
  15. Cover and cook slowly. The key here is to cook it covered to enhance the onion's sweetness and prevent bitterness.
  16. Once the other side is golden brown and firm, pour oil around the edges of the pan and fry until crispy, like deep-frying.
  17. Once the surface is nicely browned, it's done. Transfer to a cutting board, cut into desired pieces, and arrange on a plate.
  18. Sprinkle a little chopped scallions on top for garnish.
  19. Serve with your favorite dipping sauce, such as ponzu, mentsuyu (noodle soup base), or a ketchup-mayonnaise mix.
