Fresh mozzarella cheese is wrapped in pork, then pan-fried to a golden crisp for this open sandwich. A harmonious blend of toast spread with spicy mustard butter and a special tomato sauce makes this a restaurant-quality Western dish that's easy to make at home.
Ingredients
Main Ingredients (1 serving)
- Pork Loin 2 slices
- Mozzarella Cheese 1 ball
- Bread 1 slice
- All-purpose Flour (as needed)
- Beaten Egg 1
- Panko Breadcrumbs (as needed)
- Tomato 1
- Chrysanthemum Greens (as needed)
Seasonings
- [A] Butter (as needed)
- [A] Mustard (as needed)
- [B] Salt (to taste)
- [B] Pepper (to taste)
- [B] Whole Grain Mustard (as needed)
- [B] Olive Oil (as needed)
Steps
- Soften Butter (as needed) and mix with Mustard (as needed) to create spicy mustard butter.
- Cut Mozzarella Cheese 1 ball into 4 pieces.
- Season Pork Loin 2 slices with Salt (to taste).
- Layer the two slices of Pork Loin, place the cut Mozzarella Cheese in between, and roll them up to enclose. This is key: creating a thicker cutlet allows the melted mozzarella to look even more appetizing.
- Lightly coat the wrapped pork with All-purpose Flour (as needed).
- Dip the floured pork into Beaten Egg 1, then coat thoroughly with Panko Breadcrumbs (as needed).
- Finely chop the Tomato 1 with the skin on. Mix with Salt (to taste), Pepper (to taste), Whole Grain Mustard (as needed), and Olive Oil (as needed) to make the sauce. This is key: pork and mustard are a great combination, so don't skip it.
- Lightly season the Chrysanthemum Greens (as needed) with Salt (to taste) and drizzle with a little Olive Oil (as needed).
- Heat a generous amount of Olive Oil (as needed) in a frying pan. Once hot, add the coated pork.
- Start searing the pork on the seam side. Once the temperature is up, reduce the heat and slowly cook until golden brown all over. This is key: frying in too much oil might cause the cheese to leak. Instead, aim to get a nice sear and finish by cooking through with residual heat to ensure the mozzarella cheese melts perfectly.
- Spread the prepared spicy mustard butter on the toasted Bread 1 slice, which has been toasted in a separate pan or toaster.
- Once the underside of the pork has a good color, flip it over, cover with a lid, and steam-cook. After steaming, flip again.
- When the pork is cooked through, remove from heat and drain any excess oil.
- Slice the pork and let it rest for a moment to ensure it's cooked through from the residual heat.
- On the toast spread with spicy mustard butter, lay down the prepared Chrysanthemum Greens, place the sliced pork on top, and generously spoon the tomato sauce over it. This is key: using leafy greens like mizuna or watercress besides chrysanthemum greens will add not only color but also a complex flavor profile with bitterness and sweetness.
