Ingredients

Main Ingredients (2 servings)

  • Marutai Bo Ramen 2 packs
  • Thinly sliced pork 160g
  • Cabbage 140g
  • Komatsuna 40g
  • Garlic 2 cloves
  • Wood ear mushrooms 6g
  • Unsweetened soy milk 200cc
  • Lard 2 tbsp
  • Sake 2 tbsp
  • Red pickled ginger (beni shoga) to taste
  • Green onions (scallions) to taste

Seasonings

  • [A] Marutai Ramen soup packets (from 2 packs)
  • [A] Marutai Ramen seasoning oil packets (from 2 packs)
  • Garlic powder 10 shakes
  • Black pepper 8 shakes

Steps

  1. 【Yakisoba with Marutai Ramen】Roughly chop the cabbage and komatsuna.
  2. Roughly chop the thinly sliced pork.
  3. Heat sesame oil in a frying pan and stir-fry 160g thinly sliced pork.
  4. When the pork changes color, add 140g cabbage and 40g komatsuna and stir-fry. 【Tip!】 The only seasoning needed is the soup from the Marutai Ramen packet, so no salt or pepper is required.
  5. Boil water in a separate pot and cook the noodles from 1 pack of Marutai Bo Ramen for 2 minutes.
  6. Drain the noodles, lightly rinse with water, then drain thoroughly. 【Tip!】 Rinsing the noodles with water gives them a firm, springy texture.
  7. Add the noodles and stir-fried ingredients to the frying pan, then add all of the Marutai Ramen soup and seasoning oil packets.
  8. Add 10 shakes of garlic powder and 8 shakes of black pepper, and stir-fry while mixing well.
  9. Serve on a plate, garnished with red pickled ginger to taste and green onions to taste.
  10. 【Burnt Garlic Tonkotsu with Marutai Ramen】Slice the rehydrated 6g wood ear mushrooms into thin strips. 【Tip!】 Slicing them thinly makes them easier to entwine with the noodles when scooping up the ramen.
  11. Mince 2 cloves of garlic. 【Tip!】 To achieve burnt garlic, always use fresh garlic. Tube garlic contains too much moisture and is difficult to brown.
  12. Heat 2 tbsp lard in a pot, add the minced garlic, and brown it over high heat until it turns a Shiba Inu brown color. 【Tip!】 To bring out the aroma of burnt garlic, make sure to brown it thoroughly. Keep an eye on it to prevent burning.
  13. Add 600cc water and 200cc unsweetened soy milk to the burnt garlic and bring to a boil.
  14. Add 2 tbsp sake, and once boiling, add 1 bundle of Marutai Bo Ramen.
  15. Simmer the noodles for about 2 and a half minutes. 【Tip!】 If you prefer standard firmness, cook for 3 minutes. Due to the soy milk, the noodles will turn out slightly firmer.
  16. One minute before the noodles are done, add all of the Marutai Ramen soup packet.
  17. Pour the Marutai Ramen seasoning oil into a ramen bowl, then add the cooked noodles and soup.
  18. Top generously with the thinly sliced wood ear mushrooms, and garnish with green onions to taste and red pickled ginger to taste. 【Tip!】 Red pickled ginger balances the flavor. If you don't have it, you can add a small amount of vinegar instead.
