This hearty, stamina-boosting Taiwanese-style yakisoba uses thinly sliced pork, bean sprouts, and yakisoba noodles. The key is the savory depth of oyster sauce on the fragrant, pan-fried noodles. Packed with the punch of garlic and chives, it's a dish that also pairs well with rice.

Ingredients

Main Ingredients (2 servings)

  • Thinly sliced pork 100g
  • Chives 1/2 bunch
  • Bean sprouts 1 bag
  • Yakisoba noodles 2 packs
  • Garlic 2 cloves
  • Dried chili rings a pinch

Seasonings

  • [A] Soy Sauce 1 tbsp
  • [A] Cooking Sake (Rice Wine) 1 tbsp
  • [A] Oyster Sauce 1 tbsp
  • [A] Chicken Stock Powder 2 tsp
  • [A] Sugar 1 tsp
  • [A] Sesame Oil 2 tsp
  • Salt and pepper to taste

Steps

  1. Finely chop 100g of thinly sliced pork.
  2. Mince 2 cloves of garlic.
  3. Cut 1/2 bunch of chives into 3cm lengths.
  4. Empty 1 bag of bean sprouts from the packaging.
  5. In a bowl, combine 1 tbsp Soy Sauce, 1 tbsp Cooking Sake (Rice Wine), 1 tbsp Oyster Sauce, 2 tsp Chicken Stock Powder, 1 tsp Sugar, and 2 tsp Sesame Oil. Mix well.
  6. Heat vegetable oil in a frying pan. Add the minced garlic and a pinch of dried chili rings and stir-fry over medium heat until fragrant.
  7. Once fragrant, add the chopped pork and stir-fry.
  8. Season the pork with salt and pepper to taste.
  9. Once the pork is cooked, remove it from the frying pan.
  10. In the same frying pan, add 2 packs of yakisoba noodles and pan-fry over medium-high heat for about 3 minutes until the bottom is browned. Add more oil if needed. This is the key! Crispy fried noodles add extra fragrance.
  11. Loosen the noodles and spread them evenly in the pan. Pan-fry again for about 2-3 minutes until the bottom is browned.
  12. Loosen the noodles and mix them together.
  13. Place the bean sprouts on top of the noodles, cover the pan, and steam for another 2 minutes. This is the key! Steaming the bean sprouts keeps them crunchy.
  14. Once the bean sprouts are slightly softened, add the chopped chives and the stir-fried pork back to the pan.
  15. Re-mix the prepared sauce and pour it evenly over the contents of the pan.
  16. Stir-fry everything together over medium heat.
  17. Taste and adjust seasoning with salt and pepper to taste if needed.
  18. Once the chives are wilted, turn off the heat and serve on plates.
