A special stir-fried noodle dish by Chef Wakiya, made with bitter melon, a summer vegetable rich in vitamin C and dietary fiber. The exquisite balance of bitter melon's bitterness, the sweetness of the onion, and the saltiness of the spam makes this a masterpiece that pairs perfectly with meals or as a snack with drinks. The key is to fry the noodles until they are wonderfully fragrant.

Ingredients

Main Ingredients (2 servings)

  • Bitter Melon 1 whole (approx. 250g)
  • Spam 150g
  • Onion 150g
  • Garlic (thinly sliced) 10g
  • Stir-fried Noodles 2 portions

Seasonings

  • Salt (to taste)
  • [A] Soy Sauce 1 tsp
  • [A] Sesame Oil 2 tbsp
  • White Sesame Oil 1.5 tbsp
  • [B] Cooking Sake (Rice Wine) 2 tbsp
  • [B] Black Pepper
  • [B] Chicken Broth 100ml
  • [B] Soy Sauce 1 tsp
  • Finishing Sesame Oil 1 tbsp

Steps

  1. Slice the bitter melon in half, remove seeds and pith.
  2. Generously sprinkle salt on the cut bitter melon, rub well, and let sit for about 5 minutes.
  3. After 5 minutes, lightly squeeze out the released moisture.
  4. Cut the onion across the grain into slices of similar thickness to the bitter melon.
  5. Cut the spam into sticks about 4-5cm long.
  6. Place 2 portions of stir-fried noodles in a heatproof bowl, cover with plastic wrap, and microwave at 600W for 1.5 to 2 minutes.
  7. Add 1 tsp soy sauce and 2 tbsp sesame oil to the warmed noodles and mix.
  8. Heat 1.5 tbsp white sesame oil in a frying pan and spread the noodles to fry. 【This is the trick!】 Frying at a temperature that produces a good sizzling sound will make the outside crispy.
  9. Flip the noodles when one side is browned and fry both sides.
  10. Once nicely browned, remove from heat, cover, and keep warm. 【This is the trick!】 The texture where the browned and un-browned parts meld together is key.
  11. In the same frying pan, add the thinly sliced garlic and sauté until fragrant.
  12. Add a little oil and sauté the cut onion.
  13. When the onion becomes translucent, add the squeezed bitter melon and continue to sauté.
  14. Add 2 tbsp cooking sake (rice wine), black pepper, 1 tsp soy sauce, and 100ml chicken broth, and mix over high heat.
  15. When the liquid has reduced and the flavors have penetrated the bitter melon and onion, add the cut spam.
  16. When there is still a little liquid remaining, add the fried stir-fried noodles and stir-fry everything together.
  17. Taste and adjust seasoning with salt if necessary.
  18. Turn up the heat, drizzle in 1 tbsp sesame oil, mix, and it's done.
