  • [A] Yogurt 1 tbsp

Steps

  1. Thinly slice 1 cucumber diagonally, then julienne it as thinly as possible. This thin slicing is key to matching the texture of the chicken.
  2. Finely chop 5cm of green onion and prepare 2 tbsp for use.
  3. Cut 3 chicken breasts without sinew into two pieces along the grain.
  4. Arrange the cut chicken breasts in a microwave-safe dish. Place the larger pieces towards the outside. Placing the larger pieces on the outside ensures even cooking.
  5. Generously sprinkle a pinch of salt on the chicken breasts, then add 1/2 tbsp water and 1/2 tbsp cooking sake. The sake removes any gaminess and keeps the chicken tender. Using both water and sake helps to reduce the alcohol smell.
  6. Cover with plastic wrap and microwave.
  7. Carefully remove from the microwave, avoiding steam, and open the plastic wrap. Flip the chicken breasts over. Flipping them ensures even cooking.
  8. Re-cover with plastic wrap and microwave again. Adjust the cooking time based on the size of the chicken breasts.
  9. After heating, let it rest and steam until it cools down. Letting it cool down further enhances the tenderness.
  10. In a bowl, combine 1 tbsp soy sauce, 2 tbsp white sesame paste, 2 tbsp minced green onion, 1/2 tbsp sugar, 1 tsp vinegar, 1 tsp sesame oil, grated ginger from 1 piece of ginger, and the secret ingredient, 1 tbsp yogurt. Mix well to create the sesame sauce. Adding yogurt provides a rich and creamy texture, deep flavor, and a refreshing tang, resulting in a rich sauce.
  11. Once the chicken breasts have cooled down, shred them by hand along the grain or slice them with a knife. Slicing along the grain results in a tender and springy texture.
  12. Return the sliced chicken breasts to the original microwave-safe dish and let them steam further to become more tender.
  13. Arrange the julienned cucumber on a plate, and place the chicken breasts in the center.
  14. Generously pour the prepared sesame sauce over the chicken.
  15. Garnish with chili oil to taste, if desired, for a complete dish.
