  • Pork Cutlet (thinly sliced) 150g

Seasonings

  • Salt 1/3 tsp

  • [A] Cooking Sake (Rice Wine) 1 tbsp
  • [A] Grated Ginger 1 clove
  • [A] Grated Garlic 1 clove
  • [A] Sesame Oil 1 tbsp
  • Vinegar 1 tsp
  • White Sesame Seeds 1 tbsp
  • Coarsely Ground Black Pepper (to taste)

Steps

  1. Wash 2 cucumbers and cut them in half lengthwise.
  2. Scoop out the seeds from the cucumbers using a spoon. This is a key step! Seeds contain a lot of moisture, so removing them results in a better stir-fry.
  3. Cut the deseeded cucumbers in half lengthwise again, then cut each half into three pieces. This is a key step! This size is ideal for stir-frying, retaining a good texture and allowing the flavors to penetrate well.
  4. Sprinkle 1/3 tsp of salt over the cut cucumbers and let them sit for a while to draw out excess moisture. This is a key step! Cucumbers are very watery, so by drawing out excess moisture while seasoning, they absorb flavors better and achieve a good texture.

  11. Add 1 tbsp of white sesame seeds and mix briefly.
  12. Plate the dish and sprinkle with coarsely ground black pepper, if desired.
