- Pork Cutlet (thinly sliced) 150g
Seasonings
- Salt 1/3 tsp
- [A] Soy Sauce 1 tbsp
- [A] Sugar 1/2 tbsp
- [A] Cooking Sake (Rice Wine) 1 tbsp
- [A] Grated Ginger 1 clove
- [A] Grated Garlic 1 clove
- [A] Sesame Oil 1 tbsp
- Vinegar 1 tsp
- White Sesame Seeds 1 tbsp
- Coarsely Ground Black Pepper (to taste)
Steps
- Wash 2 cucumbers and cut them in half lengthwise.
- Scoop out the seeds from the cucumbers using a spoon. This is a key step! Seeds contain a lot of moisture, so removing them results in a better stir-fry.
- Cut the deseeded cucumbers in half lengthwise again, then cut each half into three pieces. This is a key step! This size is ideal for stir-frying, retaining a good texture and allowing the flavors to penetrate well.
- Sprinkle 1/3 tsp of salt over the cut cucumbers and let them sit for a while to draw out excess moisture. This is a key step! Cucumbers are very watery, so by drawing out excess moisture while seasoning, they absorb flavors better and achieve a good texture.
- In a bowl, combine 1 tbsp soy sauce, 1/2 tbsp sugar, 1 tbsp cooking sake (rice wine), grated ginger from 1 clove, grated garlic from 1 clove, and 1 tbsp sesame oil. Mix well to create the sauce.
- Add 150g of pork cutlet (thinly sliced) to the prepared sauce and mix thoroughly to coat. This is a key step! Marinating the pork in the sauce makes it tender and easier to separate when stir-frying.
- Pat the cucumbers, which have released moisture from the salt, dry with paper towels. This is a key step! Removing excess moisture makes the cucumbers ideal for stir-frying.
- Heat a frying pan. Do not add oil. Add the pork along with the marinade and stir-fry until the meat changes color, breaking it up quickly.
- Once the pork has changed color, add the dried cucumbers and stir-fry quickly over high heat. This is a key step! To maintain the cucumber's crispness, avoid overcooking.
- In the final step, drizzle 1 tsp of vinegar over the mixture and toss to combine. This is a key step! Adding vinegar sharpens the flavor and enhances the cucumber's acidity and crisp texture.
- Add 1 tbsp of white sesame seeds and mix briefly.
- Plate the dish and sprinkle with coarsely ground black pepper, if desired.
