- Cooked rice, 2 bowls
- Onion, 1
- Chicken tenderloin, 100g
- Ham, 4 slices
- Eggs, 2
- Milk, 1 tbsp
- Butter, 1-2 tbsp
Seasonings
- Ketchup, 4-5 tbsp
- Oyster sauce, 1 tbsp
- Butter, 1 tbsp
- Salt and pepper, to taste
Steps
- Peel 1 onion.
- Finely chop the onion.
- Lightly blanch 100g of chicken tenderloin to remove scum and fat.
- Finely chop the chicken tenderloin.
- Cut 4 slices of ham into 1cm cubes.
- In a bowl, add 2 eggs and 1 tbsp of milk, then strain. 【This is the secret!】 Straining makes the egg mixture smooth and creates fluffy eggs.
- Place 2 bowls of cooked rice into a mold, cover with plastic wrap, flip it over, shape it, and place it on a plate.
- Melt 1 tbsp of butter in a frying pan, add the chopped onion, and sauté until softened.
- Add the chopped chicken tenderloin and the cut ham, and stir-fry over high heat.
- Season with salt and pepper to taste. 【This is the secret!】 If using salted butter, use sparingly.
- Reduce heat to medium, add the rice, and stir-fry while loosening it.
- Add 4-5 tbsp of ketchup and mix well.
- Add 1 tbsp of oyster sauce to enhance the flavor. 【This is the secret!】 Adjust oyster sauce from 1 tsp according to your preference.
- Finally, increase heat and stir-fry to evaporate moisture, making it crumbly. 【This is the secret!】 Stir-fry over medium heat when adding rice, and finish with high heat for a crumbly texture.
- Mix the egg liquid well, incorporating air. 【This is the secret!】 Incorporating plenty of air will create fluffy eggs.
- Melt 1-2 tbsp of butter in a frying pan and pour in the egg mixture.
- Before the egg mixture solidifies, quickly shape it and cover the prepared ketchup rice.
- Drizzle with ketchup.
