  • Yam (approx. 7cm length)
  • Potato Starch (2 tbsp)
  • Eggs (2)

Seasonings

  • [A] Soy Sauce (1 tbsp)
  • [A] Mirin (Sweet Rice Wine) (2 tbsp)
  • [A] Sugar (1 tsp)
  • [B] Mayonnaise (1 tbsp)
  • [B] Salt (pinch)
  • [B] Pepper (pinch)
  • Vegetable Oil (for cooking)

Steps

  1. In a bowl, combine Soy Sauce (1 tbsp), Mirin (Sweet Rice Wine) (2 tbsp), and Sugar (1 tsp). Mix well and set aside.
  2. Rinse Yam (approx. 7cm length) under water. Remove any hairy roots by rubbing them off with your hands or by lightly charring them with a flame.
  3. Slice the yam into 8mm thick rounds.
  4. Place the sliced yam and Potato Starch (2 tbsp) into a resealable bag. Close the bag and shake to coat the yam evenly with the starch.
  5. Heat Vegetable Oil in a frying pan over medium heat.
  6. Once the pan is hot, crack 2 Eggs into it, and add Water (1 tbsp).
  7. Steam-fry over low to medium heat for 3 minutes.
  8. Flip the eggs and cook the yolks through.
  9. Once the eggs are cooked, transfer them to a bowl.
  10. Add Mayonnaise (2 tbsp), Salt (pinch), and Pepper (pinch) to the cooked eggs. Mash the fried eggs while mixing to create the tartar sauce. 【Key Tip!】 If you don't have boiled eggs, making fried eggs in the pan and then incorporating them into the tartar sauce is a quick alternative.
  11. Add oil to the frying pan and heat over medium heat. Arrange the starch-coated yam slices in the pan.
  12. Once one side is browned, flip the yam slices and cook until both sides are golden brown.
  13. Pour the sauce mixture (re-stirred from step 1) over the browned yam. Cook until the liquid has reduced and the sauce has coated the yam.
  14. Once the sauce has coated the yam, transfer to a serving plate.
  15. Place the prepared tartar sauce in the center of the yam on the plate.
  16. Garnish with chopped green onions and chili powder, if desired. It's ready!
