This is a macaroni gratin recipe that balances ease of preparation with deliciousness, made entirely in one frying pan, including the white sauce. Simply sauté the ingredients, add flour, butter, and milk, then simmer. Give it a try!
Ingredients
Main Ingredients (2 servings)
- Macaroni 50g
- Chicken Thigh 75g
- Onion 1/3
- Shiitake Mushrooms 2
- Milk 400ml
- Butter 5g
- All-purpose Flour 2 tbsp
- Shredded Pizza Cheese (to taste)
Seasonings
- Vegetable Oil 1 tsp
- Salt 1/2 tsp
- Pepper (to taste)
Steps
- Boil 50g of Macaroni according to package directions. If concerned about sticking after draining, toss with a little oil.
- Cut 75g of Chicken Thigh into about 1cm cubes.
- Thinly slice 1/3 Onion and 2 Shiitake Mushrooms into 2-3mm thick pieces.
- Heat 1 tsp of Vegetable Oil in a frying pan over low to medium heat.
- Sauté the chicken until it changes color, then season with a pinch of salt and a little pepper.
- Add the onion and sauté over low to medium heat until translucent, being careful not to burn it.
- Once the onion is translucent, add the shiitake mushrooms and sauté until softened, then turn off the heat.
- With the heat turned off, add 2 tbsp of All-purpose Flour and 5g of Butter to the pan and turn the heat to low.
- Using chopsticks, mix the flour and butter with the ingredients, sautéing for about 30-45 seconds until the white color disappears and it's evenly coated.
- Add 1/3 of the 400ml of Milk and heat over low to medium heat, stirring until it thickens.
- When it thickens and is just about to boil, add another 1/3 of the remaining milk and heat similarly, stirring as you go.
- When it's almost boiling again, add the rest of the milk and wait for it to come to a boil. [This is the key!] Adding shiitake mushrooms provides a different texture and enhanced flavor compared to just onions, and is highly recommended.
- Once the white sauce is boiling, reduce the heat to low and simmer for about 7-8 minutes, stirring the bottom and edges of the pot with a rubber spatula.
- The sauce is ready when you can draw a line with a rubber spatula across the bottom of the pot, and it stays clear for a moment.
- Season the white sauce with 1/2 tsp of Salt and a little pepper, and mix well.
- Add the pre-boiled macaroni and mix everything together.
- Transfer the finished white sauce to gratin dishes.
- Sprinkle Shredded Pizza Cheese evenly over the top.
- Bake in an oven or toaster oven until the cheese is golden brown and bubbly.
