  • [A] Sugar (to taste)
  • [A] Ground Sansho Pepper (to taste)
  • Ginger (minced) 1 tbsp
  • Garlic (minced) 1 tbsp
  • [B] Soy Sauce (small amount for noodles)
  • [B] Toasted Sesame Oil 1 tbsp (for noodles)
  • [C] Toasted Sesame Oil 1 tbsp (for frying noodles)
  • [D] Jian (Sauce Paste) 2 tbsp
  • [E] Soy Sauce 1 tbsp (for stir-frying)
  • [E] Oyster Sauce 1 tbsp
  • [E] Pepper (a pinch)
  • [F] Toasted Sesame Oil (drizzle for finishing)

Steps

  1. Mash 30g of anchovy paste into a paste.
  2. Add cooking sake (rice wine) to taste to a pot and boil to evaporate the alcohol.
  3. Add the mashed anchovy paste to the boiled sake and simmer to infuse the sake with the anchovy's saltiness and flavor.
  4. Add white sesame oil to taste and 1 tbsp of anchovy oil to the pot, mix, and bring to a simmer.
  5. Add 1 tbsp minced garlic, 1 tbsp minced ginger, and 1 dried red chili. Simmer slowly while mixing.
  6. Once the oil is incorporated and most of the moisture has evaporated, add sugar to taste and ground sansho pepper to taste and mix.
  7. Let cool slightly, then transfer to a jar and store in the refrigerator. It can be stored in the refrigerator for about 1 month.
  8. In a heatproof container, place 1 pack (150g) of yakisoba noodles, add a small amount of soy sauce and 1 tbsp toasted sesame oil, and mix.
  9. Cover with plastic wrap and microwave (600W) for about 1 to 1 minute 30 seconds to soften the noodles. The noodles will become fluffy and soft, and the aroma of soy sauce and sesame oil will transfer to the noodles.
  10. Heat 1 tbsp toasted sesame oil in a frying pan, add the softened noodles, and fry on both sides until browned and fragrant. Aim for a state where the surface is golden brown and slightly charred, creating 'Jian Men Fun'.
  11. Transfer the fried noodles to a separate container, draining off excess oil.
  12. In the same frying pan, add pork belly to taste and stir-fry until nicely browned.
  13. Add 1 bag of mixed cut vegetables and stir-fry, coating them with the pork belly fat.
  14. Once the vegetables start to soften, make a space in the center of the pan, add 2 tbsp of the prepared Jian (sauce paste), and mix with the vegetables.
  15. Add 1 tbsp soy sauce, 1 tbsp oyster sauce, and a pinch of pepper and mix.
  16. When moisture is released, return the fried noodles to the frying pan, mix everything together, and allow the noodles to absorb the moisture.
  17. Finish with a drizzle of toasted sesame oil, stir briefly to combine, and serve.
