Here's an incredibly delicious 10-minute stir-fry featuring enoki mushrooms and glass noodles, perfect for a quick and satisfying meal. Made with enoki mushrooms, ground chicken, and glass noodles, this dish is healthy, budget-friendly, and easily prepared in just one pan. It's a flavorful Chinese-inspired stir-fry that will have you reaching for more rice!
Ingredients
Main Ingredients (2 servings)
- Enoki Mushrooms 1 bunch (approx. 200g)
- Ginger 1 piece (approx. 10g)
- Ground Chicken 100g
- Glass Noodles 50g
- Chopped Green Onions (for garnish) (to taste)
Seasonings
- Water 200ml
- [A] Soy Sauce 1 tbsp
- [A] Oyster Sauce 1 tbsp
- [A] Sugar 1 tsp
- Sesame Oil 1 tsp
Steps
- Trim the tough ends from 1 bunch (approx. 200g) of enoki mushrooms, cut them into 3 equal lengths, and separate the stalks.
- Peel and finely mince 1 piece (approx. 10g) of ginger.
- Heat a frying pan over medium heat with a little oil.
- Add 100g of ground chicken and the minced ginger to the heated pan and stir-fry while breaking up the chicken.
- Once the chicken is cooked, add 200ml of water and mix.
- Next, add 1 tbsp soy sauce, 1 tbsp oyster sauce, and 1 tsp sugar, and mix everything together.
- Add 50g of glass noodles.
- Place the 1 bunch (approx. 200g) of enoki mushrooms on top of the glass noodles, cover the pan, and cook over low to medium heat for 5 minutes.
- Check if the glass noodles are cooked through.
- Remove the lid and stir-fry over medium-high to high heat to evaporate excess moisture. 【Key Tip!】 Evaporating the moisture thoroughly will concentrate the flavors and result in a delicious dish.
- Add 1 tsp sesame oil and mix well.
- Transfer to a serving dish and sprinkle chopped green onions (to taste) in the center.
