A visually stunning "Strawberry Jewel Box" recipe featuring plenty of Tochigi-grown Tochiotome strawberries. Simply pour into a mold and chill to set for a dazzling dessert that shines like a jewel. Enjoy the full flavor of vitamin C-rich Tochiotome.

  • Strawberries 280g (1 pint)
  • Gelatin Powder 10g
  • Sugar 60g
  • Water 3 tbsp
  • Water 300ml

    Steps

    1. Line the sides and bottom of your mold with parchment paper.
    2. In a bowl, add 3 tbsp of water and 10g of gelatin powder. Let it sit for about 10 minutes to bloom.
    3. Remove the stems from the 280g of strawberries and cut off the tips. Rinse under running water and drain well.
    4. Add 300ml of water and 60g of sugar to the bloomed gelatin. Heat in a 600W microwave for 1 minute 30 seconds to dissolve the gelatin and sugar.
    5. Add the hulled strawberries to the dissolved gelatin mixture in a bowl and gently mix.
    6. Place the prepared mold in an ice bath. Pour the gelatin mixture containing the strawberries in several stages. (Key Tip!) Pouring the gelatin mixture in stages will help the strawberries pack tightly, creating a jewel-like appearance.
    7. To prevent the strawberries from floating, pour in enough gelatin mixture to submerge the bottom layer of strawberries. Chill in the ice bath for 10 minutes until set.
    8. Once the gelatin has started to set, pour in enough gelatin mixture to cover about half of the remaining strawberries to prevent them from floating. Chill in the refrigerator for 15 to 30 minutes until set.
    9. When the second layer of gelatin has set, pour in the remaining gelatin mixture and chill in the refrigerator until fully set. (Key Tip!) If the gelatin mixture solidifies before you can pour it, reheat it in the microwave for about 10 seconds until melted.
    10. Once firmly set, slide a flat object like a knife into the sides of the mold where there is no parchment paper to help release it. Lift the parchment paper to remove the mold.
    11. Carefully peel off the parchment paper.
    12. Cut into desired portions and serve. (Key Tip!) The jelly has a mild sweetness, so it's delicious with condensed milk if you like. Enjoy!
