A recipe for 'Toro' omurice that is easier and less prone to failure than 'toro-toro' (very creamy). This exquisite omurice brings out the flavor of butter and eggs without using fresh cream. It can also be made deliciously by substituting sausage for bacon.

Ingredients

  • 60g Onion
  • 1 Bell pepper
  • 3 slices Smoked bacon (40g)
  • 300g Warm cooked rice
  • 6 Eggs

Seasonings

  • 5g Butter
  • 1/4 tsp Salt
  • to taste Black pepper
  • [A] 1 1/2 tbsp Ketchup
  • [A] 1 tsp Worcestershire sauce
  • [A] 1/2 tsp Sugar
  • 20g Butter
  • to taste Salt
  • to taste Ketchup

Steps

  1. Remove the seeds from the bell pepper and finely chop it into pieces the same size as the onion.
  2. Cut the sliced bacon into pieces the same size as the bell pepper and onion.
  3. In a bowl, add 1/2 tsp sugar, 1 1/2 tbsp ketchup, and 1 tsp Worcestershire sauce from [A], and mix well until the ketchup darkens slightly. 【This is the key!】 It's okay if the sugar doesn't completely dissolve.
  4. Heat the frying pan and add 5g butter.
  5. Add the onion, bell pepper, and sliced bacon almost simultaneously and stir-fry briefly. 【This is the key!】 Leaving a slight crunch in the vegetables will bring out the flavor and make it delicious.
  6. Add 300g warm cooked rice and stir-fry while pressing to break it up, mixing everything together.
  7. Once everything is mixed, add 1/4 tsp salt and to taste black pepper and mix. 【This is the key!】 Adding salt to the base, not just ketchup, will tighten the flavor.
  8. Push the rice to the side of the frying pan, pour the mixed base ketchup into the opened pan, and dissolve the sugar while lightly evaporating it.
  9. Mix the ketchup with the rice all at once. Turn off the heat when everything is evenly combined.
  10. Plate the ketchup rice, dividing it into half for 2 servings, and shape it.
  11. Crack 3 eggs into a separate bowl, add a pinch of salt, and mix well.
  12. Heat the frying pan to high heat and add plenty of 20g butter. 【This is the key!】 A frying pan with low sides is ideal. If using a deep frying pan, prepare a spatula.
  13. Pour in the egg mixture and stir quickly once a thin layer has formed.
  14. Continue to cook over heat from below while the top remains creamy.
  15. Scrape the edges of the egg and turn off the heat. 【This is the key!】 Turn off the heat here to achieve the 'toro' (creamy) state.
  16. Carefully scrape under the egg with a spatula, transfer it onto the plated ketchup rice, and place it in the center.
  17. Drizzle with ketchup to taste and serve.
