Steps
- Briefly rinse 100g seafood mix under running water and let it partially thaw. If there's an unpleasant smell, rub it with potato starch.
- Thinly slice 1/2 onion and soak it in water to reduce its sharpness.
- Thinly slice 1 stalk of celery diagonally, without removing the strings. Roughly chop the leaves as they are aromatic.
- Roughly chop 1 bunch of cilantro (coriander). You can omit it if you don't like it.
- Wrap 1 clove of garlic in plastic wrap, then crush it from the top. Crush it to a paste-like consistency, but not too fine, to release its aroma. (Key Tip!) In Thai cuisine, crushing garlic releases its fragrance and creates a milder, smoother flavor.
- Bring a large pot of water to a boil. Add 1 tbsp cooking sake (rice wine) to remove odor and a pinch of salt for seasoning.
- Add 100g ground pork to the boiling water and break it up as it cooks. Skim off any scum, then drain the water well and transfer to a bowl for mixing. (Key Tip!) Boiling the ground pork makes it less oily and lighter, while still infusing the salad with pork flavor.
- Briefly blanch 100g seafood mix in the same boiling water. Once cooked, drain well and add to the same bowl as the pork. Let it cool down.
- Cook 100g glass noodles in the remaining flavorful boiling water. Cook until they absorb the flavor.
- In a bowl, combine the crushed garlic, 3 tbsp fish sauce, 3 tbsp lemon juice, 2-3 tsp sugar, and the chopped 1 red chili pepper. Mix well to create the dressing.
- Rinse the cooked glass noodles under running water and drain thoroughly. Lightly pat dry with paper towels.
- Add the drained glass noodles to the bowl with the pork and seafood. Pour the prepared dressing over the noodles and mix well to coat.
- Loosen the ground pork and mix everything together. Add the lightly squeezed onion and celery, and mix further.
- After mixing, taste and adjust the flavor with more fish sauce, lemon juice, or sugar to your preference. (Key Tip!) Since vegetables release moisture, it's recommended to make the seasoning slightly stronger.
- Finally, add the chopped cilantro (coriander) and mix everything together. Transfer to a serving dish and it's ready!
