A fragrant stir-fry using seasonal Brussels sprouts with fundamental Chinese cooking methods. The key is to lightly oil and steam them, allowing them to absorb the savory flavors of dried shrimp and garlic. This dish is satisfying even without meat and is an easy recipe that anyone can make successfully.
Ingredients
Main Ingredients (2 servings)
- Brussels Sprouts 10-12 pcs
- Scallions 5-6 stalks
- Dried Shrimp 1 tbsp+
- Fried Garlic 1 tbsp+
- Dried Red Chilies 3-4 pcs
- Star Anise 1-2 pcs
Seasonings
- Taibaku Sesame Oil 1 tbsp+
- Cooking Sake (Rice Wine) 1 tbsp
- Water 5 tbsp
- Salt (to taste)
- Soy Sauce 1/3 tsp
- Sesame Oil 1/2 tsp
Steps
- Cut the Brussels sprouts in half.
- Cut the scallions into 3cm lengths.
- Heat 1 tbsp+ of Taibaku Sesame Oil in a frying pan over medium heat until the oil is seasoned.
- Once the oil is seasoned, add the Brussels sprouts and coat them evenly with oil.
- Cover with a lid and steam-fry over low heat for 7-8 minutes. [Key Tip!] Steaming and frying in oil allows the natural sweetness of the Brussels sprouts to come out while making them tender.
- Remove the steamed Brussels sprouts from the pan and set aside on a plate.
- In the same frying pan, add 1 tbsp+ of Fried Garlic, 1 tbsp+ of Dried Shrimp, 3-4 Dried Red Chilies, and 1-2 Star Anise. Stir-fry until fragrant.
- Once fragrant, add 1 tbsp of Cooking Sake (Rice Wine), followed by 5 tbsp of Water, and bring to a boil.
- Return the Brussels sprouts to the frying pan and reduce to low heat.
- Add a pinch of Salt and 1/3 tsp of Soy Sauce. Stir-fry, allowing the sprouts to absorb the umami flavor of the dried shrimp. [Key Tip!] Ensuring the Brussels sprouts absorb the flavorful sauce deeply will result in a rich taste.
- Once the liquid has reduced, drizzle in 1/2 tsp of Sesame Oil.
- Add the scallions and stir-fry briefly.
- Plate and serve. Enjoy!
