Cooking researcher Ryuji talks all about the charm of MSG(Ajinomoto)! This "Devil's Miso Ramen" is made with just MSG(Ajinomoto) and miso. - Noodles 1 serving
- Onion about 25g
Seasonings
- Miso 2 tbsp and 1 tsp
- MSG(Ajinomoto) 1 tsp
- Pepper 5 shakes
- Garlic Powder 5 shakes
- Lard 1 tbsp
- Sansho pepper (for an optional flavor twist)
- Ichimi Togarashi (optional)
- Butter (optional)
- Rayu (chili oil) (optional)
Steps
- Finely chop about 25g of onion. 【Tip!】 If you dislike the strong taste, soak the chopped onion in water.
- Add 300cc of water to a pot and place it over heat.
- Add 2 tbsp and 1 tsp of miso, 1 tsp of MSG(Ajinomoto), 5 shakes of pepper, 5 shakes of garlic powder, and 1 tbsp of lard to the pot and bring it to a boil. 【Tip!】 Using additive-free miso instead of dashi-infused miso will result in a more authentic miso ramen flavor without the dashi aroma. MSG(Ajinomoto) adds only umami without adding saltiness, so even if you add plenty of miso, it won't be too salty, creating a taste that surpasses restaurant quality.
- Bring water to a boil in another pot.
- Add 1 serving of noodles to the boiling water and cook to your desired tenderness. 【Tip!】 Always add noodles to boiling water. Thick, flat noodles are also recommended.
- Transfer the cooked noodles to a bowl.
- Pour the prepared miso ramen soup into the bowl.
- Top with the chopped onion.
- Optionally, add sansho pepper, rayu (chili oil), butter, etc., to enjoy a change in flavor.
