  • 1/8 head Cabbage (380g)
  • 1 pack Imitation Crab Sticks

Seasonings

  • [A] Peanut Butter 1/2 tbsp
  • [A] Miso 1 tbsp
  • [A] Mayonnaise 2 tbsp
  • [A] Toasted Sesame Seeds 1 tbsp

Steps

  1. Start making the mixed seasoning.
  2. First, prepare 1/2 tbsp of peanut butter.
  3. Warm the peanut butter in the microwave for about 10 seconds until it becomes smooth and creamy. (This is the key!) Warm thoroughly until smooth to prevent lumps.
  4. Add 1 tbsp of miso, 2 tbsp of mayonnaise, and 1 tbsp of toasted sesame seeds to the warmed peanut butter.
  5. Mix these ingredients thoroughly to create the mixed seasoning.
  6. Move on to preparing the cabbage. Prepare 1/8 head of cabbage (380g).
  7. If the cabbage you bought is a quarter of a head, make a cut in the center, hold the cut edges with both hands, and slowly pull apart to split it cleanly in half.
  8. Remove the tough, fibrous core of the cabbage by making diagonal cuts.
  9. Separate the cabbage into halves and then cut the white stem part and the leafy part separately.
  10. Lay the leafy parts of the cabbage side by side and slice them thinly.
  11. Cut the stem part of the cabbage into bite-sized pieces, then slice it thinly along the grain. (This is the key!) Cutting along the grain helps retain moisture inside, preventing it from becoming mushy and ensuring a delicious result. If it's too thick, the flavors won't meld well, so slice thinly.
  12. Rinse the cut cabbage under running water once.
  13. Thoroughly dry the surface moisture of the cabbage using a salad spinner. (This is the key!) If moisture remains on the surface, the dressing will be diluted, making the flavor bland, so be sure to drain it well. If you don't have a salad spinner, wash the cabbage before cutting and pat it dry with paper towels.
  14. Next, take 1 pack of imitation crab sticks out of the package.
  15. Using a fork, gently shred the imitation crab sticks along the grain.
  16. Wrap the shredded imitation crab sticks in plastic wrap and set aside.
  17. If using the salad spinner bowl as your mixing bowl, wipe it thoroughly dry before use.
  18. Return the drained cabbage to the bowl and add the prepared dressing, spreading it along the sides of the bowl.
  19. Mix well without crushing the cabbage. (This is the key!) If you mix it too vigorously, the cabbage will release water and become mushy. Mix lightly for a fluffy texture.
  20. Once the dressing is evenly distributed, add the shredded imitation crab sticks.
  21. Gently mix the seasoned cabbage and imitation crab sticks together so they can be eaten together. (This is the key!) Imitation crab sticks are flavorful, so if they're over-coated with dressing, they'll become too salty. Mix just enough so they are balanced with the cabbage.
  22. Taste and check the balance of flavors.
  23. Plate and serve. Enjoy!
