These are Ryuji-san's recipes for lightning-fast cream stew and seafood doria using 'Roomic' White Sauce. Tips for single-serving stew, easy for solo diners, and techniques for doria where rice and sauce are mixed are also introduced. These exquisite recipes allow you to easily enjoy authentic flavors.
Ingredients
Main Ingredients (1 serving each (2 servings total))
- Chicken thigh 80g
- Onion 60g (for stew)
- Carrot 50g
- Potato 60g
- Butter 10g (for stew)
- Seafood mix 90g
- Onion 60g (for doria)
- Pizza cheese 45g
- Butter 10g (for doria)
- Cooked rice 150g
Seasonings
- [A] 'Roomic' White Sauce 1/2 packet
- [A] Milk 150cc
- Salt and pepper to taste (for stew)
- Dried parsley to taste
- Salt 1 tsp (for defrosting seafood)
- [B] 'Roomic' White Sauce 1/2 packet
- [B] Milk 120cc
- Salt and pepper to taste (for doria)
- Nutmeg 2 shakes
- Black pepper to taste
Steps
- Put 200cc water and 1 tsp salt in a container, and soak 90g seafood mix for 10-15 minutes to defrost. After defrosting, drain in a colander and rinse with water. [Tip!] Defrosting in salt water results in a plump texture. Salt water of about 3%, similar to seawater, is recommended.
- Remove the veins from the defrosted shrimp in the seafood mix. [Tip!] It's a small effort, but it significantly improves the texture and flavor.
- Roughly chop 60g onion for the stew.
- Cut 80g chicken thigh, 50g carrot, and 60g potato into small, bite-sized pieces.
- Melt 10g butter in a pot, then sauté the cut chicken thigh, carrot, onion, and potato.
- Season everything with salt and pepper to taste.
- Add 100cc water, bring to a boil, cover, and simmer over medium to medium-low heat for 10 minutes. [Tip!] To soften root vegetables, steam them in water first. Milk is added later to prevent its flavor from diminishing.
- To the pot after 10 minutes of simmering, add 1/2 packet 'Roomic' White Sauce and 150cc milk. Stir and simmer for 5-6 minutes until thickened.
- Season with salt and pepper to taste.
- Serve on a plate and sprinkle with dried parsley to taste.
- Thinly slice 60g onion for the doria against the grain.
- If the defrosted seafood mix pieces are large, cut them into easy-to-eat sizes.
- Melt 10g butter in a frying pan, then sauté the drained seafood mix and thinly sliced onion.
- Once the onion is tender, add 1/2 packet 'Roomic' White Sauce and 120cc milk. Heat while stirring until thickened.
- Season with salt and pepper to taste and 2 shakes nutmeg.
- Mix 150g warm cooked rice and half of the sauce in a frying pan.
- Place the rice mixed with sauce into an oven-safe dish, then top with the sautéed ingredients and the remaining sauce.
- Top generously with 45g pizza cheese and bake in an oven toaster for 10-12 minutes.
- Sprinkle with black pepper to taste after baking.
