Easy to make in a rice cooker, this Autumn Chinese Sticky Rice is packed with pork loin, sweet potatoes, and mushrooms, flavored with sesame oil and Chinese seasonings. The perfect harmony of fluffy, sweet sweet potatoes and sticky, flavorful rice makes it a delicious dish even when cold, ideal for bento boxes. This is a foolproof recipe!

Ingredients

  • Glutinous Rice 2 gou (approx. 300g)
  • Sweet Potato 100g
  • Pork Loin 100g
  • Shimeji Mushrooms 100g (1/2 bunch)
  • Shiitake Mushrooms 2 pcs
  • Carrot 50g
  • Scallions (Green Onions)
  • Toasted Sesame Seeds (White and Black)

Seasonings

  • Salt a pinch
  • Sesame Oil 1 tbsp
  • [A] Water 200ml
  • [A] Cooking Sake (Rice Wine) 2 tbsp
  • [A] Oyster Sauce 1 tbsp
  • [A] Soy Sauce 1 tbsp
  • [A] Chinese Soup Stock Powder (Granules) 1 tsp

Steps

  1. Cut 100g of Sweet Potato into cubes of about 1cm and soak in water.
  2. Cut 100g of Pork Loin into cubes of about 1cm, then season with a pinch of Salt and massage. (Tip: Use pork loin for a lighter finish, or pork belly for a richer flavor.)
  3. Trim the stems off 1/2 bunch (100g) of Shimeji Mushrooms and separate them into bite-sized pieces.
  4. Trim the stems off 2 Shiitake Mushrooms and dice them into pieces of about 5mm.
  5. Peel 50g of Carrot and dice it into pieces of about 5mm.
  6. Rinse 2 gou of Glutinous Rice and drain well. (Tip: Glutinous rice does not need to be soaked beforehand.)
  7. Heat 1 tbsp of Sesame Oil in a frying pan and stir-fry the pork and carrot.
  8. Once the pork changes color and is lightly browned, add the shimeji and shiitake mushrooms and stir-fry until the mushrooms are coated with oil and softened. Turn off the heat.
  9. In a bowl, combine 200ml of Water, 2 tbsp of Cooking Sake (Rice Wine), 1 tbsp of Oyster Sauce, 1 tbsp of Soy Sauce, and 1 tsp of Chinese Soup Stock Powder (Granules). Mix well.
  10. Place the drained glutinous rice in the rice cooker pot and add only the seasoned liquid from step 9.
  11. Adjust the water level to be between the 1.5 and 2-cup marks for white rice. If your rice cooker has a sticky rice setting, fill to the 2-cup sticky rice mark.
  12. Once the water level is adjusted and the surface is leveled, add the stir-fried ingredients on top.
  13. Place the drained sweet potato cubes on top.
  14. Set the rice cooker and cook using the standard white rice setting.
  15. Once the cooking cycle is complete, let it steam for 10 minutes. Open the lid and mix everything together.
  16. Scoop the cooked sticky rice onto a plate. (Tip: Avoid keeping the rice warm, as it can become stiff.)
  17. Sprinkle with chopped Scallions and Toasted Sesame Seeds (White and Black) to your liking.
