Chef Wakiya introduces an easy-to-make, versatile 'Garlic Soy Sauce' for home cooks and a delicious salmon foil bake using it. This luxurious dish features salmon pan-fried to a crispy skin, combined with plenty of mushrooms. The fragrant combination of butter and garlic soy sauce will whet your appetite.

Ingredients

Main Ingredients (2 servings)

  • Salmon fillets 2
  • Onion 100g
  • Mushrooms 100g

Seasonings

  • [A] Garlic (thinly sliced) 5 cloves
  • [A] Fresh chili peppers (sliced into rounds) 5
  • [A] Sichuan peppercorns (to taste)
  • [A] Soy Sauce 160ml
  • [A] Shaoxing wine 40ml
  • [B] Taihaku sesame oil 1 tbsp
  • [B] Salt (to taste)
  • [B] Pepper (to taste)
  • [B] Melted butter 10g
  • [B] Garlic Soy Sauce 2 tbsp

Steps

  1. Thinly slice 5 cloves of garlic and slice 5 fresh chili peppers into rounds.
  2. Prepare a clean jar.
  3. Place the sliced garlic, chili peppers, and Sichuan peppercorns (to taste) into the jar.
  4. In a pot, combine 160ml of soy sauce and 40ml of Shaoxing wine and bring to a boil.
  5. Pour the hot soy sauce and Shaoxing wine into the jar. Once cooled to room temperature, cover and store in the refrigerator. This is the key! After about 2 days, it will thicken into a delicious garlic soy sauce that can be used in various dishes.
  6. Heat 1 tbsp of Taihaku sesame oil in a frying pan and sauté 100g of onion.
  7. Once the onion becomes translucent, add 100g of mushrooms and stir-fry over medium heat.
  8. Season with salt (to taste) and pepper (to taste). Remove from the frying pan before they become too soft.
  9. In the same frying pan, arrange 2 salmon fillets and sprinkle salt (to taste) on one side. This is the key! It's important to only season the surface.
  10. Sear the skin side over high heat until golden brown on both sides. This is the key! The skin is fatty and very delicious, so crisping it up will make it even tastier.
  11. When the skin is sizzling and fragrant, add 10g of melted butter and coat the salmon evenly.
  12. Once the skin is golden brown and ready, remove the salmon from the frying pan.
  13. Spread out aluminum foil and place the sautéed onions and mushrooms on it.
  14. Layer the grilled salmon on top and drizzle the remaining butter from the pan over the vegetables.
  15. Drizzle 2 tbsp of Garlic Soy Sauce over everything. If needed, you can add about 1 tsp of soy sauce more.
  16. Tightly fold all four edges of the aluminum foil to create a sealed packet.
  17. Place the foil packet in an oven preheated to 200°C (390°F) and bake for approximately 10 minutes. This is the key! The heat from the top and bottom will cook it thoroughly, and the foil will puff up to steam cook it.
  18. Remove from the oven once baked and serve hot.
