From our popular easy side dish series, 'Serve This With'! This carrot salad recipe is incredibly easy to make with a peeler. It stays crisp and fresh while absorbing the seasonings. Perfect for make-ahead meals and a great accompaniment to fried foods and meat dishes.
Ingredients

- Carrot 1
- Onion 1/8
Seasonings
- [A] Salt 1/2 tsp
- [A] Sugar 2-3 tsp
- [A] Vinegar 2 tbsp
- Olive Oil 2 tbsp
- Coarsely Ground Black Pepper (to taste)
Steps
- Trim the ends off the carrot. Do not peel it.
- Use a peeler to slice the carrot diagonally into wide, thin strips. Rotate the carrot as you slice to peel the sides. (Key Tip!) Don't worry about the leftover part; use it in other dishes like curry.
- Finely julienne the sliced carrot with a knife. (Key Tip!) Since the carrot is already thinly sliced, it's easy to create beautiful julienne strips without much effort.
- Place the julienned carrot into a bowl.
- In a separate bowl, combine 1/2 tsp salt, 2-3 tsp sugar, and 2 tbsp vinegar and mix well. (Key Tip!) Mixing the seasonings (except oil) first helps the carrot absorb the flavor and improves its texture.
- Add the seasoning mixture to the carrot and mix lightly. The carrot will immediately release water and become crisp. (Key Tip!) This method allows for quick flavor absorption and a great texture.
- Add 2 tbsp olive oil and mix until the salad is glossy.
- Thinly slice 1/8 onion. If the raw onion flavor is too strong, soak it in water and then squeeze out excess moisture.
- Add the sliced onion and mix. (Key Tip!) The carrot is the main ingredient, so the onion is optional. Adding it enhances sweetness and satisfaction.
- Taste and adjust seasoning with salt as needed. You can also add more sugar or vinegar to your preference.
- Transfer to a serving dish and sprinkle with coarsely ground black pepper if desired. Adding grated cheese or grainy mustard also makes it delicious.
