- Chicken thighs 700g
- Garlic 2 cloves (15g)
- Onion 200g
- Water 300cc

- [A] Tomato juice 300cc
- [A] Olive oil 1½ tbsp
- [A] Salt 1 tsp
- [A] Black pepper to taste
- [A] Oregano ½ tsp
- Sugar 1 tsp
Steps
- Season 700g chicken thighs with black pepper to taste.
- Trim the ends of 200g onion and cut in half.
- Cut each onion half into quarters.
- Place 2 cloves garlic (15g) and cut onion into a large pot.
- Add 300cc tomato juice and 300cc water to the pot.
- Next, add 1 tsp salt, ½ tsp oregano, and 1½ tbsp olive oil.
- Add the peppered chicken thighs to the pot.
- Bring the pot to a boil over high heat.
- Once boiling, cover with a lid and simmer gently over medium-low heat for 1 hour. Pro Tip: Don't worry about the small details; simply simmering over medium-low heat for an hour will make the chicken fall-apart tender.
- After simmering, open the lid and use a ladle to break apart the chicken.
- Finally, add 1 tsp sugar and mix until dissolved. Pro Tip: Adding sugar significantly enhances the umami flavor.
