This easy and delicious recipe can be effortlessly made with leftover ingredients from your fridge like bacon, kamaboko, carrots, and onions. It's a dish that lets you savor the warm taste of 'homemade fried rice', different from what you'd find at a restaurant.
Ingredients

- Rice 200g
- Bacon 35g
- Kamaboko 50g
- Carrot 25g
- Onion 30g
- Egg 1
Seasonings
- Salad oil 1 tbsp
- Hon Dashi 1 and 1/3 tsp
- Soy sauce 1 tsp
- Salt 1 pinch
- Black pepper to taste
- Sesame oil 1 tsp
Steps
- Heat frozen rice in a 600W microwave for a few minutes to thaw.
- Peel carrot 25g and dice it into pieces about the same size as rice grains.
- Roughly chop bacon 35g.
- Dice kamaboko 50g. 【Tip!】 Adding kamaboko provides a springy texture and umami. Chikuwa or crab sticks can be used as a substitute.
- Mince onion 30g.
- Add salad oil 1 tbsp to a frying pan and heat it. Once the pan is hot, add bacon 35g, kamaboko 50g, and carrot 25g and stir-fry. 【Tip!】 Fry well until the bacon renders its fat and the carrots soften.
- While stir-frying, crack in egg 1, scramble it, then add the warmed and loosened rice 200g and continue to stir-fry. 【Tip!】 Crack the egg directly into the pan without whisking and mix it with the rice as you loosen it.
- Add Hon Dashi 1 and 1/3 tsp, soy sauce 1 tsp, salt 1 pinch, and black pepper to taste, then stir-fry to combine. 【Tip!】 Adding soy sauce along the side of the pan enhances its aroma.
- Finally, add onion 30g and stir-fry quickly to retain its texture. 【Tip!】 Adding onions last preserves their crisp texture.
- Finish by drizzling in sesame oil 1 tsp and mixing it throughout.
- Serve in a bowl, and it's done.
