Easily made in a frying pan, this Chinese-style steamed cod features fragrant hot oil and a special sauce that enhances the flaky cod. Enjoy authentic Chinese flavors at home.
Ingredients
Main Ingredients (4 servings)
- Cod fillets 4 pieces
- Leek 10cm
- Ginger 2 slices
- Cilantro (for garnish) to taste
- Salt to taste
- Pepper to taste
Seasonings
- Cooking Sake (Rice Wine) 1 tbsp
- [A] Seasoning Sauce 1 tbsp
- [A] Soy Sauce 1 tbsp
- [A] Chicken Stock 4 tbsp
- [A] Sugar a pinch
- Taisaku Sesame Oil 5 tbsp
Steps
- Briefly rinse 4 cod fillets under water.
- Lightly sprinkle salt on the rinsed cod.
- Sprinkle with salt and pepper again, then rub in 1 tbsp Cooking Sake (Rice Wine).
- Line a frying pan with a rack and a cloth, and place a plate on top.
- Arrange the cod fillets on the plate, cover, and steam over high heat for 6 to 8 minutes. [Key Tip!] If using a gas stove, be very careful that the cloth does not come into contact with the flame and that the flame does not extend beyond the frying pan.
- In a bowl, combine 1 tbsp Seasoning Sauce, 1 tbsp Soy Sauce, 4 tbsp Chicken Stock, and a pinch of Sugar to make the sauce.
- Heat 5 tbsp Taisaku Sesame Oil in a pot until it lightly smokes.
- Discard the liquid that has accumulated from the steamed cod.
- Julienne 10cm leek and 2 slices ginger, then gently pile them on top of the steamed cod.
- Sprinkle lightly with pepper, then drizzle the heated Taisaku Sesame Oil over the fish.
- Pour the remaining sauce into the hot pot, bring to a boil, and pour over the fish.
- Garnish with cilantro to taste.
