A simple yet exquisite dish made by marinating fresh new onions with seared tuna. The flavors penetrate quickly, creating a perfect harmony between the crisp new onions and the rich tuna. It's a dish that goes perfectly with rice and is also great as a snack.

- New Onion 1/2 (120g)
- Seared Tuna 200g
- Toasted Sesame Seeds (to taste)
- Chopped Green Onions (to taste)
Seasonings
- [A] Mirin (Sweet Rice Wine) 1 tbsp
- [A] Sugar 1 tbsp
- [A] Soy Sauce 2 tbsp
- [A] Vinegar 1 tbsp
- [A] Water 1 tbsp
- [A] Grated Ginger 1 tsp
- [A] Dashi Powder (Dashi no Moto) 1/2 tsp
Steps
- Peel 1/2 new onion (120g) and thinly slice it against the grain. (This is the key! Slicing against the grain helps to reduce sharpness and allows the flavors to penetrate better.)
- Spread the thinly sliced new onion on paper towels and expose it to air for about 10 minutes to remove its sharpness.
- Pat dry the surface of 200g of seared tuna with paper towels and slice it into 1cm thick pieces.
- Arrange the sliced seared tuna in a storage container.
- In a heatproof bowl, combine 1 tbsp of Mirin (Sweet Rice Wine) and 1 tbsp of Sugar. Microwave at 600W for about 30 seconds to evaporate the alcohol and dissolve the sugar.
- Add 2 tbsp of Soy Sauce, 1 tbsp of Vinegar, 1 tbsp of Water, 1 tsp of Grated Ginger, and 1/2 tsp of Dashi Powder to the warmed bowl. Mix well to create the marinade.
- Place the new onion, from which the sharpness has been removed, in the empty spaces of the storage container with the seared tuna.
- Pour the prepared marinade over the new onion and seared tuna in the storage container.
- After adding the seasonings, cover with plastic wrap to prevent air contact, then place the lid on and marinate in the refrigerator for 30 minutes to 1 hour.
- After marinating, arrange on a plate, sprinkle with toasted sesame seeds all over, and top the center with chopped green onions to complete the dish.
