Ingredients

  • 2 potatoes
  • 1/8 onion
  • 2 slices bacon

Seasonings

  • 1/4 to 1/3 tsp salt
  • 1/2 tsp sugar
  • 1 tbsp vinegar
  • About 2 tbsp olive oil
  • Coarsely ground black pepper to taste

Steps

  1. Wash 2 potatoes, wrap in plastic wrap.
  2. Heat the plastic-wrapped potatoes in the microwave.
  3. Thinly slice 1/8 onion and soak in water.
  4. Cut 2 slices of bacon into 1cm wide pieces.
  5. Lightly mash the heated potatoes and peel them. [This is the trick!] Even if you don't pierce them with a skewer or fork, lightly mashing makes them easier to peel.
  6. Mash the peeled potatoes to your desired consistency. It's recommended to leave some texture.
  7. Transfer the mashed potatoes to a bowl.
  8. While the potatoes are still warm, add 1/4 to 1/3 tsp salt, 1/2 tsp sugar, and 1 tbsp vinegar to the bowl and mix. [This is the trick!] Sugar adds not only sweetness but also richness. Instead of mayonnaise, finish with a refreshing tang of vinegar.
  9. Gradually add about 2 tbsp olive oil while observing, and mix until moist.
  10. Without adding oil to the frying pan, fry the cut bacon until crispy.
  11. If desired, wipe off the fat released from the fried bacon with a paper towel.
  12. Add the squeezed onion to the fried bacon and gently mix.
  13. Add coarsely ground black pepper to taste to the mixed ingredients in the bowl and adjust the flavor.
