Steps
- Thinly slice 1/2 onion and then finely mince.
- Mix a little salad oil into the minced onion, cover with plastic wrap, and microwave.
- Remove plastic wrap, microwave again to evaporate excess moisture from the onion.
- Take 1 tbsp of the heated onion and set aside for the sauce.
- Add 20g dried breadcrumbs and 2 tbsp milk to the remaining hot onion, mix well, and let cool slightly.
- Once slightly cooled, add 1/2 beaten egg and mix.
- Add 1/3 tsp salt and 1 tbsp Worcestershire sauce to the chilled 300g ground mixed meat. Mix quickly by crushing with your hands to avoid transferring heat.
- Add the mixture of prepared onion, breadcrumbs, milk, and egg to the ground mixed meat and quickly knead until well combined.
- Lightly grease your hands with salad oil, divide the mixture into 2 portions, and shape into round patties.
- Degas the shaped patties at least 30 times, creating a smooth, glossy surface. Do not indent the center; flatten to a thickness of about 2cm. [Here's the tip!] Indenting the center makes the meat juice escape more easily, so by not indenting it, you trap the juice inside.
- Heat salad oil in a frying pan over medium heat, add the shaped hamburg steaks, and cook until a golden-brown crust forms on one side.
- Flip the hamburg steaks using the side of the frying pan and cook until golden brown on the other side. [Here's the tip!] Flipping using the side of the pan prevents meat juice from leaking out.
- Once both sides of the hamburg steaks are browned, add 3 tbsp water, cover with a lid, and steam.
- Turn off the heat and let it cook through with residual heat for 1 minute while covered. [Here's the tip!] Over-steaming can cause the flavor to escape and create a crumbly texture, so turn off the heat before that happens.
- Transfer the cooked hamburg steaks to a plate and cover with plastic wrap to keep them warm.
- Add 2 tbsp sake, the reserved 1 tbsp onion, 2 tbsp tomato ketchup, and 3 tbsp Worcestershire sauce to the remaining flavorful drippings in the frying pan and mix.
- Simmer the sauce until it thickens.
- After turning off the heat, add 10g butter and melt and mix with the residual heat to finish the sauce.
- Pour the prepared sauce generously over the hamburg steaks on the plate to serve.
