From Koutaro Kishi's popular 'Serve This With' series, we bring you a 'Torn Cherry Tomato Marinade' perfect for summer. Tearing the tomatoes by hand instead of using a knife creates a unique texture and allows the marinade to cling exceptionally well. This is a versatile recipe that goes great with breakfast sides, cold pasta, or somen noodles.

Ingredients

Main Ingredients (2 servings)

  • Cherry tomatoes, 1 pack (about 20 tomatoes)
  • Onion, finely chopped, 1 tbsp

Seasonings

  • [A] Olive Oil, 2 tbsp
  • [A] Soy Sauce, 1 tsp
  • [A] Lemon Juice, 2-3 tsp
  • [A] Honey, 2-3 tsp

Steps

  1. Remove the stems from the cherry tomatoes and wash them.
  2. Tear the washed cherry tomatoes by hand starting from where the stem was. **(Key Tip!)** Tear them sideways, being careful not to crush them.
  3. Finely chop the onion and soak it in water to remove its pungency.
  4. In a bowl, combine the **torn cherry tomatoes (1 pack)** and the **finely chopped onion (1 tbsp), drained after soaking**.
  5. In a separate bowl, mix together **soy sauce (1 tsp)**, **lemon juice (2-3 tsp)**, and **honey (2-3 tsp)** to create the marinade. **(Key Tip!)** Honey helps the other ingredients bind and adds richness. You can substitute with sugar if honey is unavailable, but honey is recommended.
  6. Add the marinade to the bowl with the tomatoes and onion, and mix well.
  7. For the finishing touch, add **olive oil (2 tbsp)** and mix.
  8. Transfer the marinated tomatoes to a glass container and chill thoroughly in the refrigerator. **(Key Tip!)** Letting it sit overnight will make it even more delicious.
