A recipe for authentic Chinese clear broth soup made with minced meat, and mixed soba noodles with pickled greens using the same minced meat for a second delicious taste. Ingredients

  • Chicken Mince 250g
  • Pork Mince 250g
  • Ginger (sliced) 1 clove
  • Green Onion (green parts) 10cm
  • Water 1 liter
  • Pickled Greens (Nozawana) 100g
  • Garlic (minced) 1 tsp
  • Noodles 1 serving
  • Bean Sprouts 1 pack
  • Minced meat from the clear broth soup

Seasonings

  • White Sesame Oil 1 tbsp
  • Cooking Sake (Rice Wine) 2 tbsp
  • Soy Sauce 1 tbsp
  • Oyster Sauce 1 tbsp
  • Pepper (to taste)
  • Clear Broth Soup Oil 2-3 tbsp
  • Toasted Sesame Oil 1 tbsp
  • [A] Soy Sauce 1 tbsp
  • [A] Sesame Oil 1 tbsp
  • [A] Salt (to taste)
  • [A] Pepper (to taste)
  • [A] Clear Broth Soup 3 tbsp

Steps

  1. In a pot, add 1 liter of water. While the water is still cold, add 250g of chicken mince and mix well with chopsticks to break it up.
  2. Similarly, add 250g of pork mince and mix well to break it up.
  3. Bring to a boil over high heat, stirring continuously.
  4. Once the clumps of minced meat have dispersed, add 10cm of green onion (green parts) and 1 clove of ginger (sliced).
  5. Once boiling, reduce heat to low and simmer for 30 minutes, maintaining a gentle simmer. (Key Tip!) Reducing the heat just before it boils will result in a clear soup.
  6. After 30 minutes, strain through a fine-mesh sieve.
  7. Let the soup cool to room temperature, then remove the solidified oil from the surface.
  8. Heat 1 tbsp of white sesame oil in a frying pan and add 1 tsp of minced garlic to release its aroma.
  9. Once fragrant, add 100g of pickled greens (Nozawana) and stir-fry well.
  10. Add 2 tbsp of cooking sake (rice wine) and the minced meat from the clear broth soup. Stir-fry over high heat.
  11. Add 1 tbsp of soy sauce, 1 tbsp of oyster sauce, and a pinch of pepper, and continue to stir-fry. (Key Tip!) Adding pepper adds depth to the flavor.
  12. Skim off 2-3 tbsp of clear broth soup oil from the surface of the soup and add it to the stir-fry.
  13. Finish by drizzling in 1 tbsp of toasted sesame oil and mixing well to create the minced meat sauce.
  14. Boil 1 serving of noodles in hot water.
  15. While the noodles are boiling, combine 1 tbsp of soy sauce, 1 tbsp of sesame oil, a pinch of salt, a pinch of pepper, and 3 tbsp of clear broth soup in a warmed bowl. Mix well to create the sauce.
  16. In a dry frying pan, add 1 pack of bean sprouts and stir-fry with the minced meat sauce.
  17. Add 3 tbsp of clear broth soup and stir quickly with large movements. (Key Tip!) Do not overcook the bean sprouts to maintain their crispness.
  18. Drain the cooked noodles and place them in the bowl with the sauce. Toss quickly to coat.
  19. Generously top the noodles with the stir-fried bean sprouts and minced meat sauce. Serve.
