Supreme croquettes that will make you forget the butcher's. The combination of fluffy potatoes, sweet and savory minced meat, and onions is exquisite. They are easy to make by deep-frying in a crispy coating. These are our proud creation, perfect for a meal or as a snack.

Ingredients

Main Ingredients (4 pieces)

  • 3 potatoes (300g after peeling)
  • 80g mixed ground meat
  • 1/4 onion (50g)
  • All-purpose flour, to taste
  • 1 egg
  • Panko breadcrumbs, to taste

Seasonings

  • 2.5 tbsp water
  • 15g butter
  • Salt and pepper, to taste
  • [A] 1.5 tbsp soy sauce
  • [A] 1 tbsp sugar
  • [A] 5 dashes MSG(Ajinomoto)

Steps

  1. Peel 3 potatoes (300g after peeling) and cut into bite-sized pieces.
  2. Place the cut potatoes and 2.5 tbsp water in a heatproof container, cover loosely with plastic wrap, and microwave for 7 minutes at 500W.
  3. Finely chop 1/4 onion (50g).
  4. Melt 15g butter in a frying pan and add 80g mixed ground meat to stir-fry.
  5. Sprinkle with a little salt and pepper and stir-fry while breaking up the meat.
  6. Once the meat changes color, add the chopped onion and stir-fry until softened.
  7. Add 1.5 tbsp soy sauce, 1 tbsp sugar, and 5 dashes MSG(Ajinomoto), and stir-fry until the flavors are well combined.
  8. Transfer the microwaved potatoes to a bowl and mash with a spoon. [Here's the secret!] Microwaving makes them fluffy.
  9. Mix the stir-fried sweet and savory mince with the potatoes and let cool until no longer hot.
  10. Divide the cooled ingredients into 4 portions and shape into oval patties.
  11. Coat the shaped croquettes in all-purpose flour, beaten egg, and panko breadcrumbs in that order.
  12. Add about 1cm of frying oil to the bottom of a frying pan and heat over medium-low heat to about 170 degrees Celsius.
  13. Add the croquettes and fry until golden brown on one side.
  14. Flip and fry the other side until golden brown.
  15. Drain the fried croquettes and arrange them on a plate. Serve with shredded cabbage, Japanese mustard, or Tabasco sauce as desired. [Here's the secret!] They are delicious even without sauce, and you can enjoy variations with Japanese mustard or Tabasco.
