A healthy fried rice packed with low-cut brown rice and broccoli. The brown rice is cooked to a fluffy, separated texture, and the broccoli stems and florets are used entirely, making this dish rich in dietary fiber and nutrients. It's a guilt-free, exquisite fried rice perfect for lunch.
Ingredients
Main Ingredients (1 serving)
- Broccoli 200g
- Brown Rice 200g (cooked, warm)
- Ham 30g
- Canned Scallops 30g
- Egg 1
Seasonings
- Salt (to taste)
- Pepper (to taste)
- Soy Sauce 1/2 tbsp
- Sesame Oil (Taihaku) 3 tbsp
Steps
- Shave the florets off the broccoli and finely chop the stems. Keep them separate.
- In a bowl, combine the broccoli stems, 1 beaten egg, 30g ham, and 30g canned scallops. Season with salt (to taste) and pepper (to taste) and mix well.
- Heat 3 tbsp of Taihaku sesame oil in a frying pan over medium heat and stir-fry the ingredients mixed in the bowl.
- Once the ingredients are separated, add 200g of warm brown rice and continue to stir-fry.
- When the brown rice and ingredients are well combined, make a space in the center of the pan, add a little Taihaku sesame oil, and stir-fry the broccoli florets.
- Season with salt (to taste) and pepper (to taste). Drizzle in 1/2 tbsp of soy sauce and stir-fry over high heat until done. [Secret Tip!] This recipe can also be made with cauliflower.
