Incredibly delicious 'Mochikoro Osatsu' made with just sweet potatoes. Easy and healthy with minimal oil for pan-frying. Crispy on the outside, chewy on the inside – these bites are perfect as a snack or a side dish.
Ingredients
Main Ingredients (2 servings)
- Sweet Potato 1/2 large (approx. 200g)
- Potato Starch 2 tbsp
Seasonings
- Sugar 1 tbsp
- Salt 1 pinch
- Water 3 tbsp
- Vegetable Oil (for frying) as needed
Steps
- Peel and cut one half of a large sweet potato (approx. 200g) into 1-2 cm cubes.
- Soak the cut sweet potato in water for about 10 minutes to remove excess starch.
- Drain the sweet potato and place it in a heatproof bowl. Cover with plastic wrap and microwave on 600W for 3 minutes.
- Add 1 tbsp of sugar and a pinch of salt to the microwaved sweet potato. Mash with a fork or masher until it forms a paste.
- Mix 3 tbsp of water into the mashed sweet potato paste.
- Add 2 tbsp of potato starch and mix well.
- Take the dough in your hands and roll it into 1.5-2 cm balls. (Tip!) If the mixture is too difficult to form into balls due to the sweet potato's moisture content, add a little more water to adjust.
- Coat the surface of the rolled sweet potato balls with potato starch. (Tip!) Place potato starch in a small dish and coat by shaking to make it easier.
- Heat about 5mm of vegetable oil in a frying pan over medium heat.
- Place the sweet potato balls in the frying pan and pan-fry, flipping occasionally, until golden brown on all sides. (Tip!) Avoid deep-frying in oil as it may cause the balls to burst; pan-frying with a small amount of oil is recommended.
- Once browned, transfer to a paper towel-lined plate to drain excess oil.
- Serve on a plate.
