- Shirataki noodles 180g
- Kimchi 60g
- Boiled egg 1
- Pork belly 60g
- Cucumber 40g
Seasonings
- [A] Sugar 2 tsp
- [A] Miso 2 tsp
- [A] Soy sauce 1 tsp
- [A] Vinegar 1 tsp
- [A] MSG(Ajinomoto) (MSG) 4 dashes
- [A] Sesame oil 2 tsp
- Chili oil to taste
- Ajishio (seasoned salt) to taste
Steps
- Slice 40g cucumber diagonally, then julienne.
- Add about 1 tbsp water to 60g pork belly and microwave for 1 minute 30 seconds to 2 minutes.
- Rinse 180g shirataki noodles thoroughly with lukewarm water, then rinse with cold water and drain. 【Chef's Tip!】 This pre-treatment is essential to remove the unique odor of shirataki noodles.
- Cut the rinsed shirataki noodles in half.
- Place the cut shirataki noodles and 60g kimchi in a bowl.
- Add 2 tsp sugar, 2 tsp miso, 1 tsp soy sauce, 1 tsp vinegar, 4 dashes MSG(Ajinomoto) (MSG), and 2 tsp sesame oil. Mix well until the miso is fully dissolved. 【Chef's Tip!】 Using miso allows you to achieve an authentic bibim noodles flavor even without gochujang. Additive-free miso is recommended.
- Chill in the refrigerator for 30 minutes, or in the freezer for about 10 minutes.
- Place the julienned cucumber on top of the chilled shirataki noodles.
- Dip the heated pork belly in water to cool it, then place it on the bowl.
- Sprinkle with green onions and drizzle with chili oil as desired.
