- Lettuce 1/2 head
- Bacon 1-2 slices
- Grated Garlic 1 clove
Seasonings
- [A] Oyster Sauce 2 tsp
- [A] Soy Sauce 2 tsp
- Sesame Oil 1 tbsp
- Coarsely Ground Black Pepper (to taste)
Steps
- Cut out the tough core of the lettuce in a V-shape.
- Wash the lettuce thoroughly.
- Tear the washed lettuce leaves into bite-sized pieces.
- Separate the tough base of the lettuce from the leaves and thinly slice it against the grain.
- Combine the torn lettuce leaves and the sliced base. Add grated garlic (1 clove) and mix briefly to distribute the garlic flavor throughout. This is a key step to ensure the garlic flavor permeates the lettuce, which cooks quickly.
- Thinly slice 1-2 slices of bacon.
- Heat 1 tbsp of sesame oil in a frying pan and add the sliced bacon.
- Sauté the bacon until it renders its flavor.
- Increase heat to high. Add the lettuce while it still has some moisture, coating it with the bacon's flavor and oil. This is a key step: keeping some moisture on the lettuce ensures a crisp texture.
- Add the sauce mixture of oyster sauce and soy sauce ([A] Oyster Sauce 2 tsp, [A] Soy Sauce 2 tsp).
- Stir-fry briefly over high heat. Turn off the heat once the lettuce begins to wilt.
- Plate the stir-fry and generously sprinkle with coarsely ground black pepper (to taste), if desired.
