Main Ingredients (10 portions)

  • Chicken Breast 2kg (1700g boneless)
  • Bell Peppers 500g
  • Potato Starch 2 tbsp (18g)
  • Rice 6 cups (approx. 900g)

Seasonings

  • Sesame Oil 1 tbsp (12g)
  • [A] Soy Sauce 3 tbsp (54g)
  • [A] Fish Sauce 1/2 tbsp (8g)
  • [A] Oyster Sauce 1 tbsp (30g)
  • Basil 1/2 tbsp (2g)

Steps

  1. Remove the skin from the 2kg chicken breast.
  2. Finely chop the 1700g boneless chicken breast.
  3. Heat 1 tbsp sesame oil in a frying pan and add the chopped chicken breast. Stir-fry over high heat until it turns white.
  4. Add the 500g bell peppers and continue to stir-fry.
  5. Turn off the heat and add the combined 3 tbsp soy sauce, 1/2 tbsp fish sauce, 1 tbsp oyster sauce, and 2 tbsp potato starch to a bowl.
  6. Cook over medium heat for 1-2 minutes until thickened.
  7. Add 1/2 tbsp basil and mix well to complete.
