Ingredients

Main Ingredients (6 buns)

  • 1/2 onion (120g)
  • 50g whole corn
  • 2 sausages
  • 1 egg
  • 50ml milk
  • 100g hotcake mix
  • 30g mixed cheese

Seasonings

  • [A] Salt and pepper to taste
  • Mayonnaise (as needed)
  • [B] Light salt and pepper
  • Coarse black pepper (optional)
  • Dried parsley (optional)

Steps

  1. Peel 1/2 onion (120g) and remove the ends.
  2. Thinly slice the onion into about 3mm thick pieces.
  3. Place the sliced onion in a microwave-safe container and heat on 600W for 1 minute. Let it cool down.
  4. Crack 1 egg into a bowl, add 50ml milk, and whisk until combined.
  5. Add 100g hotcake mix and a little salt and pepper, and mix until smooth without lumps.
  6. Dice 2 sausages into about 3mm cubes.
  7. To the batter in the bowl, add the diced sausages, 50g whole corn, and the squeezed onion (reserve 1/4 for topping). Mix evenly.
  8. Preheat your oven to 180℃.
  9. Line a muffin tin with baking cups to prevent sticking.
  10. Divide the batter evenly among 6 muffin cups.
  11. Squeeze out any excess water from the reserved onion and sprinkle it over the batter.
  12. Lightly sprinkle salt and pepper over the onion.
  13. Top with about 2 pinches of mixed cheese (approx. 5g each).
  14. Drizzle mayonnaise over the mixed cheese.
  15. Sprinkle with coarse black pepper, if desired.
  16. Place the prepared muffin tin on a baking sheet and bake in the preheated oven for 22 to 25 minutes.
  17. Remove the baked mini buns from the muffin tin.
