A dessert recipe from Kō Kentetsu Kitchen! Introducing easy lemon cake donuts made in a pan using hot cake mix. These are simple, rustic, and delicious, with an irresistible refreshing lemon aroma. They're also fun to make with kids.

Ingredients

Main Ingredients (Approx. 15 donuts)

  • Hot Cake Mix 150-200g
  • Egg 1 pc
  • Milk 2-3 tbsp
  • Lemon Zest from 1/2 lemon
  • Vegetable Oil (for frying)

Seasonings

  • Salt (for scrubbing) - amount as needed
  • [A] Powdered Sugar 60g
  • [A] Lemon Juice 2-3 tsp

Steps

  1. Prepare a domestic lemon.
  2. Scrub the lemon surface with salt. (This is the key! Rubbing with salt removes dirt and enhances the aroma.)
  3. Pat the washed lemon dry with a paper towel.
  4. Place 150-200g of Hot Cake Mix in a large bowl.
  5. Add 1 egg to the bowl and mix lightly.
  6. Add the zest from 1/2 lemon (from the dried lemon) to the batter and mix.
  7. Mix everything well.
  8. Gradually add milk, 1 tablespoon at a time, while observing the consistency, until the batter comes together.
  9. Aim for a slightly firm dough that doesn't stick to your hands.
  10. Lightly grease your hands with vegetable oil to make the dough easier to handle.
  11. Divide the dough into portions of about 20g each and roll them into bite-sized donut shapes. (This is the key! If they are larger than 20g, they might puff up too much or not cook through properly.)
  12. Pour vegetable oil into a frying pan to a depth of about 5mm (0.2 inches). Place the rolled dough pieces in the pan over low heat and fry until golden brown on one side.
  13. Once one side is golden brown, flip them over and continue frying the other side over low heat until golden brown.
  14. Roll the donuts around to ensure even browning on all sides.
  15. Once they are beautifully fried, remove them from the pan and drain excess oil.
  16. In a bowl for the icing, place 60g of Powdered Sugar.
  17. Gradually add 2-3 tsp of Lemon Juice, squeezed from the remaining lemon pulp, to the powdered sugar and mix.
  18. Stir until the icing is smooth and reaches your desired consistency.
  19. Drizzle the lemon icing over the fried donuts.
  20. Optionally, grate the remaining lemon zest over the top for a cute garnish and they are ready to serve!
