Ingredients

Main Ingredients (3 servings)

  • Potatoes 3 (250g)
  • Onion 1/2
  • Garlic 1 clove
  • Sausage 5

Seasonings

  • Soy Sauce 1 tsp
  • Mirin (Sweet Rice Wine) 1/2 tbsp
  • Olive Oil 2 tsp
  • Salt and Pepper (to taste)

Steps

  1. Cut 3 potatoes (250g) with skin on into 1.5-2cm thick slices. [The Trick Here!] Leaving the skin on enhances the potato's flavor, making it more delicious. You can peel them if you don't like the skin. While May Queen potatoes are recommended as they hold their shape well, if using other varieties, be careful not to slice them too thinly as they may fall apart.
  2. Soak the sliced potatoes in a bowl of water for about 5 minutes to remove excess starch.
  3. Slice 1/2 onion into 5mm thick slices, cutting off the root end.
  4. Crush 1 clove of garlic with the flat side of a knife. If there are any sprouts, remove them. [The Trick Here!] Always remove the garlic sprouts as they can cause bitterness and burning.
  5. Cut 5 sausages diagonally in half.
  6. Drain the potatoes and arrange them in a heatproof dish without overlapping. Cover loosely with plastic wrap, leaving one small opening for steam to escape, and microwave on 600W for 5 minutes. [The Trick Here!] Microwaving the potatoes makes them wonderfully fluffy.
  7. After microwaving, carefully remove the plastic wrap (beware of steam!) and check if a skewer can easily pierce the potatoes. If they are still hard, microwave for an additional period.
  8. Wipe away any moisture released from the potatoes.
  9. Heat 2 tsp of olive oil in a frying pan over medium heat.
  10. Place the sliced potatoes cut-side down in the heated pan and cook over low to medium heat for about 4 minutes until nicely browned.
  11. Flip the potatoes and add the crushed garlic to the part of the pan where oil has accumulated. Add more oil if needed. [The Trick Here!] Adding garlic from the beginning can cause it to burn easily, so add it after flipping the potatoes.
  12. Cook the other side for about 2-3 minutes until browned. Once the garlic is cooked, push the potatoes and garlic to the side of the pan.
  13. Add the sliced onion to the empty space and stir-fry.
  14. Once the onion becomes slightly translucent, push the garlic to the side, crush it against the bottom of the pan, and stir-fry it with the onion.
  15. When the onion is more than halfway cooked, add the sliced sausages and stir-fry.
  16. Once the sausages are cooked, add 1/2 tbsp of Mirin (Sweet Rice Wine) and stir-fry briefly. [The Trick Here!] Adding mirin first adds a rich depth of flavor and makes it more delicious.
  17. Once the alcohol from the mirin has evaporated, season with salt and pepper (to taste) and stir everything together.
  18. Finally, drizzle 1 tsp of soy sauce to finish the dish and stir-fry briefly. This is the completion. [The Trick Here!] Adding soy sauce at the end tightens the flavor and makes it more delicious.
