Easily made in a single frying pan, 'Iron Pot Tofu' is a delicious sukiyaki-style stew of firm tofu and ground mixed meat simmered in a sweet and savory sauce. Without using MSG, it achieves a deep flavor from the umami of the ingredients and sugar. It's a heartwarming dish perfect for both rice and sake.

Ingredients

Main Ingredients (2 servings)

  • Firm Tofu 350g
  • Ground Mixed Meat 140g
  • Long Green Onion 1/2 stalk 60g
  • Beef Tallow 1 piece
  • Egg 1

Seasonings

  • [A] Soy Sauce 2 and 1/2 tbsp
  • [A] Mirin (Sweet Rice Wine) 2 tbsp
  • [A] Bonito Powder 2g
  • [A] Sugar 1 tbsp

Steps

  1. Slice 1/2 long green onion (60g) diagonally.
  2. Into a frying pan (or skillet), tear and add 350g firm tofu, drained. 【Tip!】 Tearing the tofu creates jagged edges, allowing it to absorb flavor more easily.
  3. Place 140g ground mixed meat on top of the tofu.
  4. Add 1 piece beef tallow and the sliced long green onion.
  5. Add 2 and 1/2 tbsp soy sauce.
  6. Add 2 tbsp Mirin (Sweet Rice Wine) and 1 tbsp sugar.
  7. Add 2g bonito powder (or katsuobushi).
  8. Heat the frying pan over high heat, then reduce to medium once it boils.
  9. Gently break up the meat, cover, and simmer for 3-4 minutes. 【Tip!】 To ensure the meat is thoroughly cooked, break it up midway and steam-simmer with the lid on.
  10. Remove the lid and continue to simmer, reducing the liquid.
  11. Sprinkle with shichimi togarashi (Japanese seven-spice blend) to taste.
  12. In a separate bowl, beat 1 egg and use it as a dipping sauce for the cooked Iron Pot Tofu.
