This 'lazy' baked pork belly recipe is as simple as marinating and baking in an air fryer. Excess fat drains away, leaving a melt-in-your-mouth, flavorful pork belly that pairs perfectly with rice and beer. Despite its ease, it boasts an authentic taste. The accompanying scallion namul is also incredibly appetizing. If you prepare it the night before, you can simply bake it on the day for a luxurious dish.

- [A] Soy Sauce 2 tbsp
- [A] Cooking Sake (Rice Wine) 2 tbsp
- [A] Sugar 1 tbsp
- [A] Grated Garlic 1 tsp
- [A] Grated Ginger 1 tsp
- [B] Chicken Stock Powder 1/2 tsp
- [B] Sugar 1/4 tsp
- [B] Vinegar 1/2 tsp
- [B] Sesame Oil 1 tsp
- [B] Toasted Sesame Seeds 2 tsp
- Mustard
Steps
- Pierce 300g Pork Belly Block several times with a fork.
- In a cooking bag, combine 2 tbsp Soy Sauce, 2 tbsp Cooking Sake (Rice Wine), 1 tbsp Sugar, 1 tsp Grated Garlic, and 1 tsp Grated Ginger.
- Place the prepared pork belly into the cooking bag with the seasonings and rub to coat.
- Seal the bag, removing as much air as possible, and marinate in the refrigerator overnight.
- Remove the marinated pork belly from the refrigerator about 30 minutes before baking to bring it to room temperature.
- Cut the white part of 1/2 Scallion lengthwise, then diagonally into large half-moon shapes.
- After cutting the scallions, toss them with 1/2 tsp Chicken Stock Powder, 1/4 tsp Sugar, 1/2 tsp Vinegar, 1 tsp Sesame Oil, and 2 tsp Toasted Sesame Seeds. (Tip: If the scallions are too pungent, soak them in water for 10-20 minutes to mellow their flavor.)
- Set the air fryer to 180°C (350°F) and preheat.
- Once preheated, place the pork belly in the basket.
- Bake the pork belly at 180°C (350°F) for 25 minutes. (Tip: Due to its height, the top might brown too quickly. If it does, flip the pork halfway through to ensure even browning.)
- Once baked, let it cool until it's no longer hot.
- Slice the cooled pork belly into easy-to-eat pieces.
- Plate the scallion namul. Garnish with the green parts of the scallions, if desired.
- Arrange the baked pork belly on the plate.
- Add the Boiled Eggs to the plate for a complete meal.
- Serve with Mustard on the side, if desired. Enjoy!
