- Cucumbers 2

- Ginger Paste 2+ tsp
- Salt (to taste)
- Sesame Oil 1 tsp
Steps
- Peel 2 cucumbers and soak them in ice water for about 10 minutes.
- Cut the cucumbers in half lengthwise. Make 2 shallow scores (about 3-4mm deep) on the cut surface of each half. Slice them diagonally. (This is the key!) Making these scores helps the cucumbers absorb the sauce better and improves their texture.
- Place the sliced cucumbers in a bowl and mix with salt (to taste). Rub them to draw out some moisture from the surface. (This is the key!) Drawing out a little moisture enhances the cucumber's crispness.
- Add 2+ tsp Ginger Paste to the cucumbers with drawn-out moisture and mix well.
- Drizzle with 1 tsp Sesame Oil to finish. Transfer to a serving dish.
