Ingredients

Main Ingredients (1 serving)

  • Cabbage 1 leaf
  • Pork Ham 1 slice
  • Eggs 2
  • Sliced Cheese 1 slice
  • Shokupan (thin sliced bread) 3 slices
  • Butter 15g

Seasonings

  • Muscovado Sugar 1/3 tsp
  • Salt (to taste)
  • Vegetable Oil (a little)
  • Mayonnaise (to taste)
  • Ketchup (to taste)
  • Whole Grain Mustard (to taste)

Steps

  1. Finely shred 1 cabbage leaf along the grain.
  2. Finely chop 1 slice of pork ham.
  3. Crack 2 eggs into a bowl, add 1/3 tsp muscovado sugar and a pinch of salt, and whisk until combined. (Key tip!) Adding sugar creates a moist and slightly sweet seasoning perfect for bento.
  4. Tear 1 slice of cheese into the whisked eggs and add the chopped pork ham. Mix evenly.
  5. Heat a small amount of vegetable oil in an egg pan over medium heat.
  6. Quickly stir-fry the shredded cabbage in the heated pan until slightly softened. Season with a pinch of salt and set aside.
  7. Add 15g of butter to the same pan and melt.
  8. Once the butter has melted, pour all the egg mixture in at once. Stir vigorously to create a semi-cooked omelet.
  9. As the omelet sets, shape it into a square to fit the size of the bread. While the surface is still semi-cooked, place 1 slice of shokupan on top and press to adhere.
  10. Flip the omelet with the bread side down using the pan. Once a good browning is achieved, add a small amount of butter again, and place 1 slice of shokupan on top to toast until golden.
  11. Spread ketchup (to taste) evenly on the second slice of shokupan.
  12. Place the ketchup-spread shokupan on top of the omelet, pressing to adhere.
  13. Spread mayonnaise (to taste) on top.
  14. Layer the stir-fried cabbage on top.
  15. Generously spread whole grain mustard (to taste). (Key tip!) The tanginess of the mustard balances the overall flavor.
  16. Stack the remaining 1 slice of shokupan on top.
  17. Flip the entire sandwich and grill the final side until golden brown, adding a small amount of butter at the end.
  18. Transfer the cooked omelet sandwich to a cutting board and slice it into three equal portions along the longer side.
  19. Once cooled slightly, pack into a bento box and fill any empty spaces with side dishes like boiled broccoli.
