- Cabbage 250g
- Sausages 6
- Garlic 2 cloves
- Pork loin 250g
- Potatoes 2 (180g)
Seasonings
- Olive oil 1 tbsp
- Water 550ml
- Sake 50ml
- Salt 1/4 tsp
- Soy sauce 1/2 tbsp
- Consommé 1 tbsp and 1 tsp
- Black pepper to taste
- Sugar 1 tsp
- Butter 20g
- Dried parsley to taste
- Tabasco
Steps
- Cut 250g cabbage into 3 equal parts. [Pro Tip!] By dividing it into three with the core still attached, you create wider cut surfaces, allowing for more aromatic frying.
- Cut 1 onion into wedges.
- Peel 2 potatoes (180g) and cut them into bite-sized irregular pieces. [Pro Tip!] We peel the potatoes this time to enhance their flavor.
- Slice 2 cloves garlic.
- Heat 1 tbsp olive oil in a pot over medium heat.
- Add cabbage, onion, and garlic to the heated pot and cook until well browned.
- Once everything is sautéed, add 6 sausages and stir-fry.
- Add 250g pork loin to the center of the pot and cook.
- Add 550ml water and 50ml sake, then mix everything.
- Add 1/4 tsp salt and 1/2 tbsp soy sauce, then mix. [Pro Tip!] Adding a small amount of soy sauce enhances the umami of the consommé, creating a richer flavor.
- Add 1 tbsp and 1 tsp consommé (2 cubes if solid) and mix until dissolved.
- Sprinkle with black pepper to taste.
- Cover and simmer for about 15 minutes, until the meat is cooked through and the vegetables are tender.
- Turn off the heat, add 1 tsp sugar and 20g butter, and mix until dissolved.
- Serve in bowls, sprinkle with dried parsley to taste, and it's done.
- Add Tabasco to taste for a change of flavor, if desired.
