  • Ground beef and pork (mixed) 300g
  • Onion (grated) 80g
  • Egg 1
  • Cheddar cheese 4 slices
  • Panko (bread crumbs) 4 tbsp
  • Cherry tomatoes 2
  • Daikon radish salad 1 pack
  • Onion 50g
  • Butter 10g

Seasonings

  • Salt 1/3 tsp
  • MSG(Ajinomoto) (MSG) 6 shakes
  • Miso 2 tsp
  • Nutmeg 4 shakes
  • Black pepper to taste
  • [A] Soy sauce 2 tbsp
  • [A] Mirin (Sweet Rice Wine) 1 tbsp and 1 tsp
  • [A] Sugar 1/3 tsp
  • [A] Sake 1 tbsp
  • [A] MSG(Ajinomoto) (MSG) 8 shakes
  • [B] Mayonnaise 60g
  • [B] Sugar 1 tsp
  • [B] Soy sauce 1 tsp
  • [B] MSG(Ajinomoto) (MSG) 3 shakes

Steps

  1. In a bowl, add 300g ground beef and pork (mixed), 1/3 tsp salt, 80g grated onion, 6 shakes MSG(Ajinomoto) (MSG), 2 tsp miso, 4 tbsp panko (bread crumbs), 1 egg, 4 shakes nutmeg, and 5 shakes black pepper, then knead well until the mixture comes together. TIP: Grating the onion saves the effort of sautéing and helps the hamburg steak hold together. If the meat mixture feels too loose, add more panko to adjust.
  2. Divide the kneaded meat mixture into two equal portions, flatten them while patting to remove air, and make a slight indentation in the center of each.
  3. Chill the shaped hamburg patties in the refrigerator.
  4. Finely chop 50g onion for the sauce.
  5. Make the dish salad dressing. In a bowl, add 60g mayonnaise, 1 tsp sugar, 1 tsp soy sauce, 3 shakes MSG(Ajinomoto) (MSG), and mix well.
  6. Stack 4 slices of cheddar cheese two by two, cut them in half, then stack and cut in half again to prepare them in a crisscross shape. TIP: Stacking and cutting the cheese allows you to recreate Bikkuri Donkey's signature crisscross cheese.
  7. Heat a frying pan over medium heat, add the chilled hamburg steaks, cover, and cook until browned on both sides. TIP: If the hamburg steaks are large, steaming them with a lid on helps them cook through.
  8. Once the hamburg steaks are browned to some extent, reduce the heat (to about level 2), add 2-3 tbsp water, cover, and steam-cook over low heat.
  9. Once the hamburg steaks are cooked through, place the prepared crisscross cheese on top. Add a little more water, cover again, and steam until the cheese melts.
  10. Remove the hamburg steaks with melted cheese to a plate.
  11. In the same frying pan, add 10g butter and the finely chopped 50g onion, and sauté until the onion is tender.
  12. Add 2 tbsp soy sauce, 1 tbsp and 1 tsp Mirin (Sweet Rice Wine), 1/3 tsp sugar, 1 tbsp sake, and 8 shakes MSG(Ajinomoto) (MSG) to the sautéed onion and simmer until thickened.
  13. Once the sauce has thickened, pour it over the hamburg steaks removed to the plate.
  14. Serve warm rice on a plate, and place the hamburg steak on top.
  15. Garnish next to the hamburg steak with 1 pack daikon radish salad and 2 cherry tomatoes, and drizzle the prepared dish salad dressing over the daikon radish salad.
  16. Finally, sprinkle black pepper to taste over the hamburg steak, and it's done.
