- Peel 1/4 onion and 1 clove of garlic.
- Grate the onion to prepare 30g.
- Put the cold 280g ground beef and pork mix into a bowl.
- Add 2/3 tsp salt, grated 1 clove of garlic (approx. 5-6g), 6 shakes of nutmeg, and 2 tbsp panko.
- Add 2 tsp lard (or 1 piece of beef fat), 8 shakes of Aji-no-moto, and black pepper to taste, then mix quickly.
- Add 4 tbsp Pure Select Mayonnaise and mix quickly so the meat doesn't get warm. Chef's Tip! The oil and mildness of the mayonnaise make the hamburg steak tender and juicy even without eggs.
- Divide the mixture into 2 equal portions.
- Remove air while shaping the hamburg steaks, making a slight indentation in the center. Chef's Tip! Removing air while shaping prevents cracking during cooking.
- Heat a small amount of vegetable oil in a frying pan over medium-low heat.
- Place the shaped hamburg steaks in the frying pan, cover, and cook one side over medium-low heat (approx. 3 minutes). Chef's Tip! Making an indentation in the center prevents excessive swelling during cooking, resulting in a beautiful shape. Cooking on high heat will only scorch the surface, so cook slowly over medium-low heat.
- Once browned, flip and cover again, cooking the other side over medium-low heat (approx. 3 minutes). Chef's Tip! Use 3 minutes per side as a guideline, adjusting based on the temperature of the meat.
- Flip the hamburg steaks again, cover, and cook further over medium-low heat (approx. 1-2 minutes). Flip a few times to adjust browning and ensure they are cooked through.
- Turn off the heat and let them cook through with residual heat, keeping the lid on.
- If clear juices come out from the center of the hamburg steak, it's cooked through. If cloudy, cook for an additional 1-2 minutes over medium-low heat. Chef's Tip! Insert a skewer or fork; if clear juices come out, it's done. To prevent being undercooked, you may heat it in the microwave if necessary.
- Serve 400g of warm cooked rice in a bowl and place the cooked hamburg steak on top.
- Optionally, pour any remaining pan juices over the hamburg steak.
- Sprinkle a little salt on the hamburg steak, top with an egg yolk, and serve with wasabi to enjoy a change of flavor.
