Ingredients
Main Ingredients (2 servings)
- Ground beef and pork mix 200g
- Onion 1/2 small (100g)
- Panko breadcrumbs 5 tbsp
- Milk 1 tbsp
- Egg 1 pc
- All-purpose flour a little
- Garlic 3 cloves
- Butter 10g
- Vegetable oil 2 tsp
- Water (for steaming) 2 tbsp
Seasonings
- Salt 1/4 tsp
- Pepper a little
- [A] Mirin (Sweet Rice Wine) 2 tbsp
- [A] Soy Sauce 1 tbsp
- [A] Sugar 2 tsp
Steps
- Peel and finely chop 1/2 small onion (100g).
- Place the chopped onion in a heatproof container, cover with plastic wrap, and microwave at 600W for 1.5 minutes. Let it cool down.
- Peel and grate 1 clove of garlic out of the 3 cloves.
- In a bowl, combine Mirin (Sweet Rice Wine) 2 tbsp, Soy Sauce 1 tbsp, and Sugar 2 tsp. Mix well.
- Thinly slice the remaining 2 cloves of garlic.
- Heat Vegetable oil 2 tsp and the sliced garlic in a frying pan over medium heat. [Here's the trick!] Heat until the garlic's moisture evaporates and it turns brownish. Once lightly colored, reduce to low heat and be careful not to burn it.
- Once golden brown, remove the garlic to create crispy garlic chips. Leave the garlic-infused oil in the frying pan to use when cooking the hamburgers.
- In a separate bowl, combine Panko breadcrumbs 5 tbsp, Milk 1 tbsp, and the beaten 1 egg. Mix well to soften the breadcrumbs.
- In a large bowl, add Ground beef and pork mix 200g, Salt 1/4 tsp, and Pepper a little. Knead well until it becomes sticky.
- Add the softened breadcrumbs and the cooled chopped onion to the sticky ground meat. Knead further until the color is uniform throughout.
- Divide the kneaded meat mixture into 2 portions. Slam them onto your palm to remove air and shape into oval patties. Make an indentation in the center with your finger.
- Lightly coat the surface of the shaped hamburgers with all-purpose flour. [Here's the trick!] The flour coating will lock in the juices and make them delicious.
- Heat the frying pan with the reserved oil over medium heat. Once hot, place the shaped hamburgers in the pan.
- Sear for about 2 to 3 minutes until browned on the bottom, then flip.
- Add 2 tbsp of water, cover with a lid, and steam over low heat for 6 minutes.
- They are cooked through if the juices run clear or if a metal skewer inserted comes out hot. Once cooked, remove the hamburgers to a plate.
- Pour the prepared sauce mixture into the frying pan used for the hamburgers and heat over medium heat until it slightly thickens.
- Drizzle the thickened sauce over the plated hamburgers and place 5g of butter in the center.
- Scatter the prepared garlic chips around the edges. Serve and enjoy!
