- [A] Cooking Sake (Rice Wine) 150cc
- [A] Mirin (Sweet Rice Wine) 150cc
- [A] Sugar 150cc
- Salt (to taste)
Steps
- Lightly rub 500g green beans with salt while washing. Key tip: This removes fuzz and dirt.
- Rinse the salt-rubbed green beans under water.
- Boil water in a pot, add the green beans, and boil for about 30 seconds after it returns to a boil. Key tip: Boil them slightly firmer as they will be simmered further.
- Drain the boiled green beans in a colander.
- In a bowl, combine 150cc Cooking Sake (Rice Wine), 150cc Mirin (Sweet Rice Wine), 150cc Dark Soy Sauce, and 150cc Sugar from [A].
- Add your desired amount of chili pepper and ginger paste (or sliced/julienned ginger) to the seasonings from step 6.
- Mix the seasonings from step 6 and combine with the boiled green beans.
- Transfer the green beans and seasonings to a pot and heat over high heat.
- Cover with a drop lid and simmer over high heat.
- Stir occasionally, being careful not to burn. Reduce heat to low if it seems too strong.
- Simmer until the liquid has almost evaporated.
- Turn off the heat once the liquid has reduced. The dish is complete. Key tip: It's even more delicious and satisfying with rice when served chilled.
